  • Patent number: 9242791
Abstract: The invention relates to a capsule for delivering a drink by injecting a pressurized fluid comprising a body (2), an injection wall (3), a chamber (4) containing a bed of food substance to be extracted, means for retaining the internal pressure (5) in the said chamber. The improvement consists in the provision of an injection space (7) allowing a means of injecting fluid in the form of at least one jet of fluid to be introduced through the injection wall and in providing a means (6) for breaking the jet of fluid and distributing the distribution of fluid at a reduced speed across the surface of the bed of substance. These means may adopt various forms such as that of a rigid or flexible perforated wall, or a layer of discrete elements or a spongy layer. Such a capsule improves the flow of liquid extract through the pressure retaining means (5) and improves the extraction conditions.

  • Patent number: 8062682
Abstract: A method for producing a beverage or liquid comestible from a single capsule by subdividing the interior of the capsule into a plurality of compartments, at least two compartments containing beverage-forming ingredients, introducing a liquid into one of the compartments of the capsule and starting to produce and drain a first beverage component on the basis of the ingredient contained in the first compartment, and opening a fluid communication between the first and the second compartment such that after the start of the production of the first beverage compartment, a production of a beverage component on the basis of the ingredient contained in the second compartment commences. The capsule is preferably used to make cappuccino-style beverages.

  • Patent number: 7930972
Abstract: Apparatus and method of obtaining a frothy drink from a cartridge, the cartridge being made up of at least one chamber containing at least a preparation for a drink. Where the cartridge is injected with a predetermined volume of fluid, a first part of which essentially consists of air which is compressed in the cartridge to a pressure lower than the pressure at which the cartridge opens or the drink flows freely through the cartridge and a second part of which consists of water, or possibly of a mixture of air and water, which is injected after the first part into the cartridge so as to make it possible to obtain the drink by causing the internal pressure to increase until the cartridge opens or the drink flows freely through the cartridge thus allowing the drink to be discharged and froth to be formed.

  • Patent number: 6358552
Abstract: An aroma product resulting from the recovery of aroma components from coffee. A slurry of coffee grounds in an aqueous liquid is subjected to stripping for stripping aroma components from the slurry. The stripping is carried out using gas in a substantially counter-current manner to provide an aromatized gas containing aroma components. The aroma components are then collected from the aromatized gas. The aroma components may be added to concentrated coffee extract prior to drying of the extract. The coffee powder produced has much increased and improved aroma and flavor and contains higher levels of furans and diketones.
