    Abstract: The disclosure discloses a method for processing oil crops with rhodotorula, and belongs to the technical field of fermentation. The method includes the step of inoculating the rhodotorula (such as Rhodotorula mucilaginosa, Sporidiobolus salmonicolor and Rhodotorula glutinis) that can produce carotenoid into a fermentation medium that contains oil-rich oil crops for solid state fermentation to obtain oil and oil crop meal rich in carotenoid. The carotenoid as a fermentative metabolite of the rhodotorula has bioactivities of resisting oxidation, preventing vascular sclerosis, enhancing immunity and preventing cancers. Contents of carotenoid in the oil and oil crop meal acquired by the method can be up to 9.071 ?g/g and 8.062 ?g/g correspondingly.

    Abstract: The disclosure discloses a method of fermenting soybeans or other oil crops by edible and medicinal fungi, and belongs to the technical field of fermentation. The method involves solid-state fermentation by inoculating edible and medicinal fungi such as i Ganoderma lucidum, Tremella aurantialba, Hericium erinaceus and Cordyceps sinensis that can produce bioactive substances such as active polysaccharides, flavonoids and triterpenoids in a fermentation substrate containing oily crops such as extruded soybeans, peanuts and rapeseeds, thereby obtaining oil and oil crop meal rich in the bioactive substances. In the oil obtained by the method, the content of flavonoids is as high as 0.302 mg/g, and the content of triterpenoids is as high as 65.663 mg/g. In the oil crop meal, the content of active polysaccharides is as high as 60.651 mg/g, the content of flavonoids is as high as 1.599 mg/g, and the content of triterpenoids is as high as 14.225 mg/g.

According to the method of the present invention, in the liquid fermentation of Antrodia camphorata, an analysis method of rapidly judging the content variations of triterpenoids by rapid on-line or off-line detection and analysis of the content of a volatile aromatic substance ?-terpineol is utilized to implement automatic control of the fermentation process. Predictive analysis of triterpenoids in the fermentation process based on variations in on-line real-time parameters increases the controllability and production predictability of the fermentation process. This is of great significance for the development and utilization of Antrodia camphorata products having various bioactivities and application thereof in industrial production.
