Abstract: The invention relates to the use of inulinase for reducing FODMAP (Fermentable oligo-, di-, monosaccharides and polyols) content in wholemeal bread or whole-meal dough. The invention further relates to wholemeal yeast fermented bread with a FODMAP content of maximum 0.2 gram fructans per 50 g of bread on dry matter base. The invention relates to methods of preparing a wholemeal yeast fermented bread with reduced FODMAP content, comprising the steps of mixing wholemeal and inulinase into a dough, allowing the dough to ferment and baking the dough. The invention further relates to methods of preparing a wholemeal dough with reduced FODMAP content in a wholemeal dough, comprising the steps of mixing wholemeal and inulinase into a dough, allowing the dough to ferment. Yeasts such as Kluyveromyces marxianus can be used as source of inulinase.

Abstract: The present invention relates to microbial safety of meat products. In particular new additives are provided for effective reduction of pathogenic bacteria, such as Shiga toxin producing Escherichia coli (STEC), on or in meat products. The present inventors found that a combination of a nonionic surfactant and organic acid is particularly effective in the reduction of these and other pathogenic bacteria in meat products. The addition of a thickening agent was found to further enhance the effectiveness of the compositions in eliminating these pathogenic bacteria. The present invention provides these meat preservation compositions, the methods of treating meat with these compositions, the related uses of these compositions, as well as the meat products accordingly obtained.

Abstract: A method is provided for operating a controlled atmosphere (CA) system to regulate the atmosphere in a cargo storage space. The CA system comprises a gas exchange module operable to vary the level of a component gas in the cargo storage space, a control module to control operation of the gas exchange module, and at least one of an oxygen sensor and a carbon dioxide sensor, each being operable to measure a parameter indicative of a level of oxygen or carbon dioxide respectively in the cargo storage space. The method comprises: the control module determining a respiration parameter value indicative of the rate of change of oxygen level and/or the rate of change of carbon dioxide level in the cargo storage space due to respiration of goods in the cargo storage space; and the control module controlling operation of the gas exchange module based on the determined respiration parameter value to target an oxygen level setpoint and/or a carbon dioxide level setpoint.
