    Abstract: A device for freezing foodstuffs on a tray cart includes a liquid cryogenic refrigerant spraying system for each side of the cart. The spraying systems are activated by reversible magnet valves. Rotary fans circulate the vaporized refrigerant. The fans are reversibly rotated for drawing in or blowing out the vaporized refrigerant across the cart shelves.

    Abstract: A device for steam cooking food comprising a closed chamber for containing said food and having an access door for insertion and removal of the food. The chamber includes a floor having a plurality of vents therein. A reservoir for containing liquid for producing steam is positioned beneath the vents and transmits steam in one direction, said steam in said chamber producing a condensate containing contaminates from said food, said condensate being transferred through at least one group of said vents to the reservoir. A pan is located beneath said one group of said vents for catching said contaminated condensate.

    Abstract: A baking oven comprising a housing having a proofer compartment and a baking compartment. Doors are provided for access to the compartment. Support racks are disposed in the compartments for supporting dough products therein. A heating element and conduit are associated with the proofer compartment for recirculating hot humid air therein. The baking compartment has a rear wall supported in spaced relationship to interior surfaces of the baking compartment to define an outer circumferential convection opening thereabout. An air intake port is provided in the rear wall and an impeller fan draws air through the intake port and directs it through heating elements and then expels it through the circumferential opening forwardly of the rear wall creating a recirculated heated air flow distributed through the baking compartment.

    Abstract: Dish for use with meal tray feeding system in which dish is lifted for heating by a heater shelf slid between the dish and the tray has improved retention to resist being jostled out of contact with heater. Two parallel runners on the dish bottom have downwardly extending foot portions at their ends which greatly enhance the retention of the dish relative to both a pair of guide rib portions on the tray and the heater shelf. The heater shelf is mounted by a bracket to the side wall of a cart within which the heater shelves are mounted and the foot portions straddle the bracket.
