To this end, the cooking vat of the system is designed with one or more heating elements positioned to avoid generation of turbulent flow in the cooking medium. Moreover, the movement of food product along the cooking vat and/or out of the cooking vat is done reliably and in such a manner to avoid turbulent flow in the cooking medium. The automatic cooking system provides improved cooking medium life span as well as reduced overall oil volume use.

    Abstract: There is provided a portable liquid filtering apparatus for filtering liquid used in a container, such as cooking oil in deep fat fryers. The apparatus includes a mounting bracket that attaches to a portion of the container. The mounting bracket supports a liquid pump. A filter assembly including at least one filter element is removably disposed in the container, and is connected to the pump inlet by a suction tube. The pump draws the liquid through the filter element and suction tube and propels it into a discharge tube connected to the pump outlet. The discharge tube discharges the filtered liquid back into the container for reuse. The mounting bracket is adjustable for attachment to various sized containers. The suction tube and the discharge tube are shaped to conform generally to the shape of the container.

    Abstract: A pump for use in a filtration process for a deep fryer is disclosed. The pump includes a drive shaft linked to a motor or motor drive shaft. The drive shaft passes through a seal assembly before passing into the pump chamber. The seal includes an outer seal housing that accommodates a lip seal. The lip seal is fabricated from PTFE. A combination oil filtration and supply system for a deep fryer is also disclosed that includes a motor linked to the drive shaft. The drive shaft passes through a supply pump and a filter/return pump. The supply pump includes an inlet in communication with a fresh oil reservoir and an outlet in communication with the filter/return pump. The filter/return pump includes an inlet in each communication with an oil filtration system and an outlet in communication with the outlet of the supply pump and an inlet to an oil distribution network. The oil distribution network includes a plurality of outlets, each in communication with an inlet of a vat.

    Abstract: A cooking oil filtering system to extract cooking oil from a reservoir and direct it an enclosed centrifugal filter. The oil which is passed through the centrifugal filter is then directed back to the reservoir. The centrifugal filter is powered by a turbine which in turn is powered by a portion of the cooking oil which is delivered by a pump to the centrifugal filter. There is an oil supply and return section where there is an inlet hose having an end inserted in the oil of the reservoir and is connected to a pump which in turn directs the oil to the housing in which the second centrifugal filter is retained. The oil that is directed to power of the turbine and also to pass through the centrifugal filter is directed to a drain that in turn connects to hose which returns the cooking oil to the reservoir.

    Abstract: A method is provided for treating cooking oil during frying operations, which comprises in situ treatment of the oil with a source of calcium or magnesium combined with silicate such that the calcium or magnesium substantially does not leach into the oil.     Abstract: The present invention relates to a food fryer. The food fryer comprises a frying section where the food is fried in oil and an oil removal section where the oil content of the food is reduced. A basket located within the apparatus contains the food and is movable between the two sections. At least one motor is operable to remove oil content from the food and to move the basket between the two sections, and a controller communicates with the motor and other elements of the apparatus to facilitate the frying of the food. Exemplary embodiments of the invention provide methods for minimizing a cooling rate of the cooked food to prevent oil from gathering in the center of the cooked food and to increase the desirability of the cooked food. A cover that is sealably connected to the food frying apparatus aids in maintaining a temperature in the frying and oil removal environments that is higher than room temperature.
