    Abstract: Compound bung-type stopper assemblies for wine and spirits barrels, comprising a body having an enlarged head portion, a reduced, tapered neck portion and a tapered, disposable elastomeric cup that snugly fits over the neck. The taper permits the inventive compound bung to be universal in fit and the elastomeric material of the cup grippingly conforms to bunghole irregularities. The body can be re-used with multiple cups, each being dedicated to a different wine or spirit, or after the cup has worn out. Body materials are selected from any essentially low- or non-resilient material, including glass, hard plastic (such as polycarbonate), wood, metal or ceramic, and may be colored. The head may be domed or flat, and may be decorated, as by etching, embossing or painting with the winemakers or winery mark. The inventive compound bungs/bodies that are identified by such marks may be sold as collectibles or as commemorative devices.

The sheet pressing assembly is driven by the stepping motor to be descending through the connecting member. When the sheet pressing assembly descends, the sensor unit touches the sheets and sends a signal to the control system, the control system figures out the thickness of the sheets by calculating steps the stepping motor having passed, then the control system makes the stepping motor further move with certain steps to drive the sheet pressing assembly further descend to apply a suitable pressure on the sheets.

The fermentation bung may have an outer plug that includes a central inner annular hole and a one or more holes surrounding the central hole, the outer plug fitting within a bung hole in a barrel in which a substance is going to be fermented. The device may further include an inner plug with a centrally extending stem that frictionally fits into the central inner annual hole of the outer plug to secure the inner plug into the outer plug and also have a top portion which covers the one or more holes surrounding the central hole. During the fermentation of the substance, the gases produced during fermentation may be vented through the device since the top portion of the inner plug may flex slightly to permit the escape of the gas. However, the device prevents any ambient air from entering the barrel since the top portion of the inner plug is covering the one or more holes.

In installing and removing, the closure is readily adapted to be turned at an angle to the axis of the orifice for easier insertion and removal and for bung-type closures the filler apparatus for a beer barrel is useful in installing these closures.
