Dampers are located at the air inlet and air exhaust ducts, which may be monitored and adjusted by temperature and moisture sensors for maintaining a selected temperature and moisture condition to extract the moisture content of the food to a desirable condition. Conveying and lifting apparatus is associated with the chamber to permit the recirculation of the cysts until a sufficient degree of dryness is obtained. Heated air is introduced into the stationary drying chamber. The apparatus provides for final separation of any broken shrimp cysts still remaining.
