  • Patent number: 6756068
Abstract: A method and apparatus for vending food products from a roller-type grilling machine includes a packaging system that extends the product life on the grilling machine by keeping the food product from directly contacting the grilling machine. By packaging the product in accordance with the principles of the present invention, the food product is kept in a controlled environment until it is opened by the ultimate consumer after being heated by the grilling machine. The packaging is comprised of a cylindrical tube having a diameter that is sufficient to contain the desired food product and that will properly rotate on a roller-type grilling apparatus. Such packaging may comprise an elongate tube formed from heat tolerant plastic, cardboard-type paper lined with metal foil, or other materials known in the art. End caps are attached to the ends of the elongate tube and sealed relative thereto.

Abstract: An apparatus and method for making uniformly shaped snack food chips which can be stacked for packaging, e.g., in a cylindrical canister or a canister which conforms to the contour or perimeter of the snack food chips. The apparatus features two-part mold cavities in which chip preforms are restrained and transported through hot oil to be cooked. Preferably, the mold cavities are defined between a pair of rotating belts, one lower belt and one upper belt, which together “encase” or “sandwich” and thereby restrain the chips. According to the method, a continuous sheet of dough is toasted and then proofed before being cut into individual chip preforms. The preforms are then placed into the mold cavities and transported through hot oil to be cooked. Vacuum transfer rollers are used to facilitate placement of the chip preforms into the mold cavities and extraction of the cooked chips from the mold cavities.

Abstract: The present invention relates mainly to a method of preparing foodstuffs based on fish flesh [i.e. the flesh of fish proper, and/or shellfish], and to foodstuffs obtained by this method. In the method of the invention, the fish flesh is mechanically mixed or kneaded to a moderate extent, i.e. the mechanical action avoids any significant irreversible spoiling of the fiber structure of the flesh, this action taking place in the presence of edible water-retaining compounds, in particular edible hydrocolloids. Mixing and/or kneading is continued until a uniform distribution is obtained in the mass of fish flesh of the water-retaining compounds and any other additives. The present invention is particularly applicable to the food industry. The present invention is mainly applicable to transforming fish proper, as distinct from shellfish.

  • Patent number: 5457939
Abstract: A process for packaging foodstuffs in substantially rigid containers. A desired quantity of foodstuff to be packaged is placed in the container, a quantity of aqueous liquid in an amount sufficient to generate, when boiled, a volume of vapor sufficiently in excess of the volume of the container to substantially completely displace all other gases from the container, is added. The container is closed but not sealed, so as to permit communication between the interior of the container and the ambient atmosphere. The container and its contents are warmed to a temperature sufficient to generate the volume of vapor when the container is subjected to a pressure lower than atmospheric pressure. The temperature is kept as low as possible so that no cooking of the foodstuffs occurs. After warming, the containers are exposed to a low pressure so that the liquid in the container boils. The boiling liquid generates vapor in the container sufficient to drive out and displace other gases from the container.

  • Patent number: 4590078
Abstract: Process and apparatus for preparing baked products in tray-shaped cans, whereby venting means are provided as part of the baking apparatus for transfer of generated steam and gases from the inside of the can. Covers are provided with channels for directing the outflow of steam and gases through a partially clinched lid of a tray-shaped baking can, while the baking is taking place. The baked product is permitted to rise uniformly, with no deformation that would normally occur when the steam and gases act to depress the baked product if they are confined to the baking can. Because a lighter, lower water-active batter is required for the process of the invention, the resulting baked product is light and evenly baked and has a substantially extended shelf-life.

  • Patent number: 4399159
Abstract: A tray and lid assembly formed of synthetic plastic material for containing a pre-cooked meal which is to be stored in the frozen state and thereafter reheated before being served. The tray which has a polygonal shape is provided with an outwardly-extending continuous flange running along the upper edge of the sides to surround the open mouth. The lid, which has the same geometry as the tray and is of the same material, has a downwardly-extending peripheral skirt which engages the periphery of the tray flange and a continuous underside strip which is received within the mouth of the tray. Because of the presence of the meal in the tray, when the assembly is subjected to freezing temperatures, the lid contracts to a somewhat greater extent than the tray, as a consequence of which the skirt is caused to press against the flange to effect an outer seal, whereas the strip is inwardly displaced from the mouth to provide a leakage path.
