Following a short period of cooking, the mold containing the formulated fried eggs is transported to a freezer unit for freezing, then is removed from the mold for packaging and storage. At a future time, the frozen formulated fried egg product may be thawed and reheated for consumption by an individual.

During cooking, the fatty juices in the poultry or meat are secreted out of and away from the poultry or meat because of its upright position and are collected in the collecting pan. The liquid seasonings in the steaming tube are vaporized and enter the poultry or meat to replace the loss of the fatty juices and thereby maintain the moistness of the poultry or meat while adding flavor.

The insert includes a plurality of perforations in communication with the interior chamber. Steam produced within the interior fluid chamber is gradually disbursed to the cavity via the perforations to prevent the fowl from drying.

The apparatus is preferably of thermally conductive material such as aluminum. In use, the container is at least partially filled with a flavored liquid. A whole chicken is impaled on the cylinder, and the apparatus holding the chicken is then placed on the grilling surface of a barbecue grill.

Different cooking surface zones may be heated individually to accommodate the amount and type of food. The cooking surfaces have grooves through which vapor from a heated marinade cup is channeled to steam the food and drain fat for removal. The marinade vapor replaces fat and natural juices producing a relatively low fat, moist cooked meat.

The present invention, therefore, allows a solid baste material such as butter, or a liquid baste material such as oil to be placed in the receptacle during a roasting operation for basting without removing the cover.

    Abstract: Apparatus for two-sided cooking comprises one or more upper housing assemblies each having a pair of spaced bayonette members which are removably insertable in a holster brackett. The bracket is readily attachable to the rear of a conventional cooking grill thus retrofitting the grill conveniently for two-sided cooking. A plurality of lightweight platens are mounted in the upper housing by quick release pins which permit the upper platens to float relative to the housing. Because of the lightweight, multiple and floating nature of the upper platens, the housing can be lowered to the grill surface as to completely enclose the items being cooked, thus containing heat and trapping moisture in the cooked product. In addition, food products having differing thicknesses can be cooked simultaneously without appreciable sticking.
