Abstract: Disclosed herein is a circulating filtration type frying machine, which heats oil in a vessel using heating means, such as a heater or a burner, to fry food. The frying machine includes a partition, which is provided in the vessel to partition a space in the vessel into a heating space and a frying space and comprises a horizontal part and a vertical part. An oil inlet is defined between the bottom of the vessel and the end of the horizontal part of the partition. An oil outlet is defined between a sidewall of the vessel and the upper end of the vertical part. The frying machine includes a collection space, which extends downwards from the frying space at a position adjacent to the oil inlet to collect residue of fried food therein. A valve is provided in the collection space to control discharge of the collected residue of the fried food. Thus, oil heated in the heating space is discharged through the oil outlet and is moved into the frying space.

  • Patent number: 6505546
Abstract: A vessel for cooking food under pressure wherein the shape of a bottom surface of the vessel and the position of heating elements which heat cooking fluid contained within the vessel act to form a cool zone in a region near the bottom surface. Within the cool zone, the temperature of the cooking fluid is maintained below the cooking temperature so that food particles dislodged from the food being cooked do not burn and contaminate the cooking fluid. In addition, the temperature in the cool zone is maintained above the boiling point of water so that moisture contained within the food particles is continuously evaporated during the cooking cycle, preventing boil over conditions. A novel pressure release system is provided for intermittently operating a pressure release valve near the end of the cooking cycle. A computer controller controls operation of the release valve based upon the temperature of the cooking fluid to eliminate sudden drops in temperature.

Abstract: A system for removing cooking oil from a fryer vat is provided. The system includes a storage tank for storing cooking oil. The storage tank is disposed remotely from the fryer vat and in fluid communication with the fryer vat through a fixed piping system. A pump is arranged to transfer cooking oil from the fryer vat to the storage tank through the fixed piping system. A shut-off valve for directing cooking oil transferred by the pump to the storage tank is also provided. The shut-off valve is movable between an open position wherein the shut-off valve permits cooking oil to flow through the fixed piping system to the storage tank and a closed position wherein the shut-off valve blocks flow of cooking oil through the fixed piping system to the storage tank. A level sensor is arranged to detect whether the cooking oil in the storage tank is at a predetermined level.

  • Patent number: 6470794
Abstract: The invention provides a fryer wherein the tasks of supplying and disposing oil are both simple and safe. An oil supply pipe (41) branches off from an oil pipe (34) between an oil tank (31) and an oil pump (33) of a fryer (1), and an oil supply valve (42) is provided at that connection portion for switching the intake route of the oil pump (33) between the oil tank (31) and the oil supply pipe (41). An oil disposal pipe (44) branches off from the oil pipe (34) between the oil pump (33) and an oil vat (11), and an oil disposal valve (45) is provided at that connection portion for switching the outflow route of the oil pump (33) between the oil vat (11) and the oil disposal pipe (44). Then, the valves are operated with an oil supply valve lever (43) and an oil disposal valve lever (46), and driving the oil pump (33), the tasks of supplying and discarding oil are carried out automatically.

Abstract: An improved efficient deep fat fryer is described. Heat exchange within the fryer tank is facilitated by a “U” shaped burner tube which is cantilever mounted from a side of the tank and a burner system is provided to circulate in a spiral pathway products of combustion through the burner tube. An internal turbulator baffle is provided to both facilitate the spiral circulation through the tube and to facilitate heat transfer from the combustion gases to burner tube walls. Exhaust gases are circulated downwardly from the burner tubes to a plenum beneath the tank which also has heat transfer baffle plates to facilitate heat exchange. Ultimately the products are expelled through a flue. The system further comprises filter bags for continuously filtering the oil which are disposed in a sump at the surface of the oil so that oil continually spills from the tank into the sump where it is filtered preferably by one or more bags of cloth material.

  • Patent number: 6378420
Abstract: A filter system for a deep fat fryer is described. The filter system can be used in a single fryer or with two or more sequentially operated fryers. In the later case, a common filter pan is used with a horizontal filter in the pan, disposed below a common drain pipe. A return pipe is mounted in the center of the filter. This pipe is connected to a pump inlet so that oil to be filtered is admitted to the pan above the filter, and filtered oil is removed from the pan through the filter. Filtered oil is then circulated by the pump through a three port valve to return the oil to the appropriate fryer tank. If the valve is closed the oil will be routed through the valve to an adjacent tank valve for admission to that tank so that a single pump may be used for a plurality of tanks. An optional flush system can also be provided so that oil can be used to flush a tank manually.

  • Patent number: 6371307
Abstract: In accordance with this invention, an improved filter resembling an envelope is disclosed. The filter envelope for the filter frame element includes an enclosure, the enclosure being constructed from planar first and second filter paper members lying atop one another. The first and second filter paper members each have a lateral, medial, base, and top sides, the lateral, medial, and base sides being connected to each other, respectively, to define the enclosure. The top side of the first member is not connected to the top side of the second member so as to define an opening in the enclosure to receive the frame. A closure is formed from a planar third filter paper member which is connected to a portion of the enclosure being proximate to the opening. The third filter paper member is movable between a first position and a second position, the second position being suited to close the opening.
