Abstract: A hand-held, manually operated seed shucking appliance enables a food preparer to remove the seed coverings of black-eyed peas from their kernels. A spring and piston inside a chamber are arranged to compress a load of pre-soaked black-eyed peas against a shuttle rasp threaded between side slots. As a user manipulates the shuttle rasp, the shucks are scraped off the seeds by a scraping surface and both pass through the side slots. The piston is configured to be cocked back such that the chamber can be loaded through one end with a fresh charge of black-eyed peas.
Abstract: The invention relates to a device for trimming the surface of meat, in particular fish fillets, comprising a transporting element by means of which the products which are to be processed are conveyed continuously in the transporting direction T into the region of a knife head, also comprising an element for detecting the position of the products, as well as a knife head for trimming the products and a means of controlling the movement of the knife head in dependence on the information and data determined by the position-detecting element, the device being distinguished in that the knife head is designed for automatically executing free trimming cuts along the surface contour of the products. The invention also relates to an apparatus for processing meat using a device mentioned above, and to a corresponding surface-trimming method.

Abstract: One embodiment of a cutting apparatus for edibles may include a base member. The cutting apparatus may also include a pair of sliding assemblies mounted on opposite edges of a top surface of the base member. The cutting apparatus may further include a cutting assembly slidably carried by the pair of sliding assemblies. The cutting assembly may include a pair of side plates mounted on the pair of sliding assemblies. The cutting assembly may also include a plurality of spacers mounted between the pair of side plates in a spaced apart relation. Further, the cutting assembly may include a plurality of blades held by the plurality of spacers, press-fitted between the pair of side plates. The cutting apparatus may also include a handle assembly mounted between the cutting assembly and the pair of sliding assemblies and adapted for slidably moving the cutting assembly over the base member.
Abstract: The hard shells or hulls of whole nuts are effectively cracked and separated from the nut meat by propelling and impacting the whole nuts at a predetermined trajectory velocity against an adjustable impacting plate set at the appropriate impacting angle. By controlling the manner in which the whole nuts impact against the impacting plate, the fracturing of the hard shell may be controlled so as to optimize the whole nut meat recovery while minimizing the production of split nut meats. A variable speed impeller in combination with adjustability of the impacting plate optimizes the nut cracking and nut meat separation for any type of whole nut. An orderly sequential feed of whole nuts to an off-set feed zone of rotating impellers equipped with vanes having a catching section and an accelerating section at a regulated rotational speed effectively propels the whole nuts against the adjustable impacting plate.
Abstract: An apparatus is disclosed which can shape fruits and root and tuberous vegetables. The shaping apparatus is operated in such a manner that: when root and tuberous vegetable or fruit is placed in a cutting blade case and rotated, the object is spirally tracked and the spirally tracked object is removed from the lower side of the cutting blade case, so that the spirally tracked object is picked up by an additional stick and then ornamented into various forms. The shaping apparatus allows fruits and root and tuberous vegetables to be easily treated in a variety of ways, as per the second process, thereby enhancing the product value of processed foodstuffs produced from the first process.

Abstract: A double blade peeling device for vegetable and fruit comprises a handle attached to a vegetable and fruit retaining member and a body of screw, the handle can drive internal gears to rotate, so as to make the retaining member and the body of screw to rotate as well. The body of screw, which is provided with two screw threads, drives upper and lower blade carriers to move upward and downward oppositely, such that the blades mounted on the upper and lower blade carriers move downward and upward respectively, contact the rotating food frictionally, and peel vegetable or fruit from upside and underside simultaneously. When two blade carriers move to the intermediate position to complete the peeling action, the two blade carriers open through wedge in blade carrier devices, two blades leave the surface of food, the lower blade carrier devices disengage with the body of screw. The body of screw drives upper blade carrier device to press the lower blade carrier device to move downward unceasingly.
Abstract: A fully automated apparatus and system for processing shellfish such as shrimp and crawfish including the cooking, drying and peeling thereof. The present invention utilizes excessive heat generated by boilers to heat the dryers. The product is cooked in a brine mix that once used is transferred to a broth processing system to make a seafood flavored broth and is also injected as a fine mist into a furnace where it crystallizes into a solid product to be used as a seafood flavored salt.
Abstract: An apparatus for preparing lettuce heads with tightly packed overlapping leaves or vegetables with a similar structure. The apparatus includes a plurality of workstations and supports for receiving lettuce heads and for conveying the lettuce heads through the workstations. At the workstations, cutters are operably disposed for severing the bases of the outer leaves and for slicing into the tops of the outer leaves. A device, such as an air jet, is provided at one of the stations for removing the outer leaves. Additional cutters are provided at the work stations for transversely slicing the central part of the lettuce head and for severing a portion of the central part from the heart of the lettuce head. Still another cutter is disposed at one of the stations for severing pink parts from the heart. A cutter is also provided for severing the heart from the stalk. The edible parts such as the central parts and the heart are then collected in receptacles disposed at the work stations.
Abstract: An apparatus for separating mixed material of different flowability comprises a hollow drum driven to rotate and having a perforated outer drum surface, about a portion of which is wrapped an endless compression belt adapted to apply pressure onto the hollow drum. For stripping material which remains on the outer surface of the hollow drum after compression, a stripping blade is provided which is arranged to float essentially radially with respect to the drum.

Abstract: A hand-held, power-driven trimming device, especially useful in trimming excess carcass fat, includes a cylindrical housing having a hollow interior, a rotary-driven cutter blade assembly with multiple helical cutting blades mounted for rotation in the housing, and a handle on the housing for holding the trimming device during use. The helical cutter blade assembly is mounted along the axis of the housing through a cantilever mount inside a sealed lubrication chamber in one end of the housing. The blade assembly is preferably driven from a remote power source, such as an electric motor, coupled to a flexible drive shaft passing through the handle. The flexible drive shaft powers a worm or helix gear supported by bearings inside the chamber. The worm or helix gear drives a helix gear supported in the sealed lubrication chamber by bearings on the cantilevered drive shaft for the rotary blade assembly.
Abstract: Methods and apparatus for processing grain to provide meal, grit, flour and masa products suitable for human consumption and by-products suitable for use as animal feed and industrial products. The methods includes forming a slurry of the grain with water and processing the slurry through dehusking, germ detaching, grinding and sifting stages while maintaining the grain at a relatively high moisture content. Partially different methods are employed depending on whether the processed grain is sorghum, wheat or corn. The processing apparatus includes a dehusking unit having a plurality of pump stages to remove the husks from the grain kernels without cracking a substantial portion of the kernels. A fluidized bed dryer is utilized to remove excess water and to surface dry the kernels and husks. For sorghum grains a centrifugal impact germ detacher is utilized to break up the dehusked kernel and separate the germ and oil from the endosperm.
