Abstract: The present invention discloses a method for extracting cinnamon oil; firstly, a cinnamon powder is mixed and conditioned with an aqueous solution of sodium salts, and the conditioned cinnamon powder is obtained thereafter; subsequently, the conditioned cinnamon powder obtained was frozen and then rapidly thawed, and the thawed cinnamon powder is obtained thereafter; finally, after the thawed cinnamon powder is mixed with a gaseous solvent, pressurized liquid extraction is performed, and then after separation the cinnamon oil is obtained. The method for extracting cinnamon oil from cinnamon at a low temperature adds an aqueous solution of sodium salts to condition the cinnamon powder, uses a slow freezing process and a rapid thawing process, and finally uses a gaseous solvent, which may gasify without heating to be separated from the extract; the extraction process is kept away from air, and the heat-sensitive components are not damaged.
Abstract: Flavor infused cinnamon sticks and a method for making the same. Natural cinnamon sticks are infused with various flavors, flavor pre-cursors, or other agents such as vitamins, sweeteners, or food colorants. The cinnamon sticks provide a natural matrix for carrying the various flavors or other agents, as well as providing a convenient handheld stirrer when used to add flavor to a beverage. Although ground cinnamon produces an intense amount of cinnamon flavor that would dominate over other infused flavors, the cinnamon flavor in intact cinnamon sticks leaches out only slowly, and thus the cinnamon flavor can harmoniously co-exist with the various infused flavors. Various methods of producing the infused cinnamon sticks are also taught.

Abstract: The present invention discloses a process for manufacturing cinnamon tea pod. The process involves pre-treating Ceylon zeylanicum leaves by blanching the leaves for a predefined time set to enable a cessation of enzymatic activity in the cinnamon leaves. The process further involves dehydrating the Cinnamon (Ceylon zeylanicum) leaves at a preset dehydrating conditions to prepare cinnamon leaves particles. The process is followed by preparing cinnamon bark extract powder under predefined conditions. The process is continued by mixing the Ceylon zeylanicum particles and the cinnamon bark extract powder in a ratio of 98 wt. % to 2 wt. % respectively. At last, the process involves preparing tea pods including the mixed cinnamon leaves particles with the said cinnamon bark extract.

Abstract: An improved frozen cinnamon roll can be produced using a specific improved recipe and a significantly improved process. The cinnamon roll product can be manufactured and sold in a frozen form to a retail outlet. At the retail outlet, the frozen product can be thawed and baked to form a cinnamon roll that appears substantially equivalent to a fresh cinnamon roll prepared from basic ingredients on site. The recipe involves the use of specific ratios of ingredients that results in a frozen formulation that can be prepared frozen, thawed and baked successfully. In the process, a soft, sweet dough formulation is combined with a fat smear combined with a passivated cinnamon preparation. The soft, sweet, yeast-leavened dough is protected from deactivation by cinnamon using a preferred amount of smear in relation to the cinnamon. Further, the cinnamon is incorporated into the fat, using procedures forming a coated smear, that protect the soft, sweet dough yeast from the cinnamon materials.
