    Abstract: The chlorosucrose sweetener known as sucralose is prepared in a thermally stable composition by co-crystallization with a cyclodextrin. The resulting crystalline product may be comminuted to form particles of desired size for use as a sweetener component in place of or in addition to known sweeteners such as sucrose, saccharin and the like, in a variety of foods, comestibles, and oral medications. The preparation of the stabilized sucralose compositions of the present invention constitutes a molecular encapsulation of the sucralose within the cyclodextrin thereby protecting the sucralose from discoloration caused by heat. Numerous applications for this stabilized complex are suggested and disclosed.

The present invention also pertains to methods for preparing the sugarless, substantially anhydrous chewing gum compositions and the chewing gum products in which they may be used.

    Abstract: A process for purifying polydextrose to remove contaminants remaining from manufacturing sufficient to provide an organoleptically-acceptable polydextrose ingredient for foodstuffs which includes intimately contacting an aqueous solution of polydextrose having a concentration of from about 10% to about 50% with a polar organic solvent in a ratio of polydextgrose solvent of from about 5-15 of polydextrose to about 45-75 by weight of solvent. Furthermore, the mixture is allowed to equilibrate to form a substantially contaminant-containing fraction and a substantially polydextrose-containing fraction, followed by separating the fractions for use of the polydextrose-containing fraction. The present invention further includes compositions of foodstuffs including the purified polydextrose.

    Abstract: An apparatus and process for forming a center-filled confectionary rope in which the center candy is a candy which, during the forming process, is too viscous to be pumped. A center candy is obtained and formed into a continuous cylindrical shape. This is done by using a feeding miller which extracts from the viscous center candy mass a continuous flow of candy. This continuous flow of candy is introduced into a batch roller which forms the continuous flow of candy into a continuous cylindrical shape. An exterior candy mass is obtained and formed into a continuous rectangular shape. This is accomplished by placing the exterior candy mass in a feeding miller which extracts a continuous flow of the exterior candy mass in the form of a rectangular cross section. The continuous rectangularly shaped exterior candy mass is then attached to the continuous cylindrically shaped viscous candy mass and wrapped around the cylindrical center candy in a helical fashion.
