Abstract: Heteropolysaccharide 105-4, prepared by fermentation of a new unnamed Pseudomonas species ATCC 53923 is useful as an industrial thickening, suspending or stabilizing agent.
Abstract: A process is disclosed for site-directed chemical modification of peptides and proteins that consists of two steps; (a) selective oxidation of a 2-hydroxyethylamine moiety, --CH(NH.sub.2)--CH(OH)--, in the peptide or protein to generate an aidehyde, and (b) reaction of the new aldehyde with a second reagent to form a product in which the native biological properties of the peptide are augmented by new and useful properties conferred by the second reagent. Additionally, the invention pertains to certain specified types of product formed by the above process.
Abstract: There is disclosed a low calorie fat substitute comprising an outer coating of a digestible fat surrounding an inner core of a low caloric or non-caloric material.
Abstract: There is disclosed a low calorie fat substitute comprising a non-flowable aqueous phase and an oil phase, with the interaction between said aqueous and oil phases resulting in a pourable emulsion. Also disclosed are food compositions containing pourable and nonpourable emulsions.
Abstract: A browning composition is prepared by mixing an oil phase containing an emulsifier with an aqueous phase containing a colorant under shear conditions to form a dispersion of the aqueous phase in the oil phase.

Abstract: A vertical remote-controlled gunning apparatus having a horizontal nozzle wherein the water supply conduits and material supply conduits are integrated into a mixer-swivel head which controls the swiveling and rotation of said conduit.
Abstract: There is disclosed a method for removing dissolved oxygen from aqueous systems, for example, boiler water systems for oil injection water or brine. The disclosed method uses a salt of a keto-gluconic acid, or a salt of a stereoisomer of a keto-gluconic acid, as the oxygen scavenger a metal containing compound which controls the rate of oxygen removal.
Abstract: There is disclosed a low calorie fat substitute comprising an emulsion containing a non-flowable aqueous phase, an oil phase and a fat extender. Also disclosed are low calorie fat substitutes wherein the fat or oil is replaced by a fat mimetic.
