Abstract: A frozen shumai in which hardening of a part of a shumai wrapper which is not in contact with a shumai filling is suppressed, and deterioration of texture during eating is improved even when the frozen shumai taken out from a freezer is heated as it is in a microwave oven without a treatment or operation of spraying water on the surface of the frozen shumai or covering the frozen shumai with a food wrap film is provided. Specifically, a frozen shumai containing a shumai wrapper and a shumai filling, wherein a water content of a part of the shumai wrapper which is not in contact with the shumai filling is 35 wt % to 80 wt % after heating the shumai as it is in a microwave oven until a core temperature of the shumai reaches 50° C. to 90° C. is provided.
Abstract: Provided is a quick and simple method for screening dimerized cyclic peptides, a library therefor, and molecules including cyclic peptides that can be used in the method and the library. For example, the method for screening dimerized cyclic peptides includes (1) a step in which, in a cell-free expression system, a cyclic peptide, a dimerization domain including a cysteine residue and a leucine zipper region, and at least one polypeptide including a peptide linker existing between the cyclic peptide and the dimerization domain are synthesized, and a dimer of the polypeptide is prepared, and (2) a step in which activity based on binding between the dimer and a target molecule is measured.

An L-amino-acid is produced by cultivating a coryneform bacterium having L-amino acid-producing ability in a culture medium, which has been modified so as to have one or more of the following modifications: (A) a modification for increasing activity of acetate kinase, (B) a modification for increasing activity of fructose-1,6-bisphosphatase, (C) a modification for decreasing activity of pyruvate dehydrogenase, (D) a modification for decreasing activity of aspartate transaminase, and (E) a modification for decreasing activity of malic enzyme; and collecting the L-amino acid from the culture medium and/or the bacterial cells.
