The water is injected as a horizontal jet over a fan and into an opposing baffle plate, where a portion is heated on contact and immediately evaporates into steam. The unevaporated portion is drawn downward into the fan, where it too is distributed throughout the oven cavity rather than collecting on the cavity floor.
