Abstract: The present invention relates to a method for producing an acidified milk drink using an enzyme which reduces the isoelectric point of the milk proteins. The invention also relates to a novel enzyme having deamidase activity and its use in production of an acidified milk drink.
Abstract: Liquid microbial starter culture that retains its initial metabolic activity during storage for extended periods of time. Such liquid starter cultures are useful in the manufacturing of food and feed products. Starter cultures of the invention include culture of lactic acid bacteria, e.g. Lactococcus species.
Abstract: Many probiotic Bifidobacteriacea contains an active tetW that renders the cells resistant to tetracycline. This presents a theoretical risk of a horizontal transfer of functional antibiotic genes. The present invention relates to novel tetracycline-sensitive strains of the well-known probiotic Bifidobacterium animalis subsp. lactis strain BB-12® and the use of such novel strains for the preparation of a food or feed product or a dosage form comprising viable organisms.
Abstract: Use of a composition obtainable by a process comprising fermenting a food material, comprising animal milk or vegetable proteins, with a lactic acid bacterium to obtain a fermented food material which comprises active components with heart rate reducing properties for the manufacture of a product for reducing the heart rate and/or the fluctuations in the heart rate of a mammalian.
Abstract: A method for the preparation of carminic acid lakes, novel carminic acid lake compositions and their uses in foods, such as yogurt, fruit preparations, beverages, other miscellaneous food products that may need a stable red color, and in cosmetics.
Abstract: A new method and a system for the simultaneous determination of a biological, chemical and/or physical property of a plurality of individual samples of a turbid is described. The invention relates to a system and colorimetric method for simultaneous determination and measuring properties, such as acidification or pH value, redox potentials, viscosity, diffusion, enzymatic activity, etc. of a plurality of individual samples of a turbid or opaque medium, such as, e.g. milk, whey and related products. In particular, this invention relates to a method for non-invasively and/or non-destructively scanning samples or an array of samples, and determine on the basis of the scanning a specific property, such as pH, of the samples. The method may also be used for multivariate determinations of chemical and/or physical properties.

Abstract: A device for the continuous dosage of frozen starter cultures into a liquid fermentation medium is provided. The device comprises a fermentation unit and a container for the thawing of the starter cultures. It further comprises means of retaining the frozen cultures inside the thawing container while allowing the culture in liquid form to feed into a circuit for continuously feeding the fermentation medium to be inoculated. Furthermore, a method of dosing a frozen inoculant into a liquid fermentation medium is also described.

Abstract: Novel food-grade cloning vectors comprising a nonsense mutation suppressor-encoding gene, which vector, when it is present in a lactic acid bacterial strain, permits such a strain to have an industrially appropriate growth rate and metabolic activity. The cloning vectors are useful when present in lactic acid bacteria used as starter cultures in the preparation of food or feed products, or a dairy flavor.

Abstract: The present invention relates to dynamically controlling the expansion of a fluid bed reactor system. By mounting a density detector to a floating body that floats on top of the carrying medium in the fluid bed, one can detect the density at a certain position that is level with the sensor head of the detector. Upon comparing the density detected with a pre-determined density, the flow velocity of the carrying medium is adjusted accordingly.
