    Abstract: Each ozonization loop (1) which includes a compressor (2), an ozonizer (3), and a heat exchanger (8) for cooling the oxygen-ozone mixture, is associated with three cylinders (4,5,6) filled with silica gel. Each cylinder operates in succession in a cocurrent adsorption, in countercurrent desorption by a substitution gas, and in scavenging by taking off a part of the flow circulating in the loop. The scavenging flow is recovered and combined with the substitution gas. The substitution gas may be in particular impure nitrogen supplyed by an air distillation apparatus producing the necessary oxygen.

    Abstract: A process for deoxygenating or carbonating a food or biological liquid product having an initial dissolved oxygen concentration between 9 mg/l and 12 mg/l, comprising injecting at least one gas selected from the group consisting of nitrogen and carbon dioxide into a current of the food or biological liquid product thereby to form a gas/liquid emulsion. The emulsion is introduced into a storage vessel. The gas is at a pressure of about 3 bars. The gas and liquid are injected into a confined mixing chamber at a volume rate of gas to liquid between 3 and 5, and expelled the chamber at a velocity of 15 to 30 meters per second into the vessel above the bottom of the vessel a distance which is a minor proportion of the height of the vessel, until the residual dissolved oxygen content is less than 0.25 mg/l.

    Abstract: The presence of fermentation inhibiting activity in a sample is determined by contacting the sample with bacterial strains and detecting the inhibition of the activity of the strains. A carrier (1) carrying microtitration cups arranged in four rows of cups (8) is provided. The cups of the same row contain a lyophilisate comprising a given bacterial strain. Each sample to be tested, effected in a tube (3), is diluted in a tube (4) containing a culture medium and bromocresol purple and then poured into the cups of a given column by means of an automatic pipette and cones (5). After incubation, a drop of janus green reagent in tube (6) is introduced in each cup and, after a new incubation, the number of cups which have produced a change in color indicates the degree of contamination of the mixture. The process may be applied in the determination of bacteriophages present in cheese-making vats.
