Abstract: The invention relates to an extraction module with linear closure for the pressurized preparation of a drink from a capsule, containing a substance for extraction, comprising a device for extraction with a first extraction sub-assembly and a second mobile extraction sub-assembly closing against the first sub-assembly such as to form an extraction chamber in the closed position and to provide sufficient space between the two sub-assemblies for introduction of a capsule between the sub-assemblies in the open position and comprising a device for fixing and positioning the capsule between the two sub-assemblies. The device for fixing and positioning may be displaced in a coaxial manner with relation to the linear displacement of the mobile extraction sub-assembly and is capable of being displaced linearly by the second mobile sub-assembly in to a displaced position such as to permit a closing of the two sub-assemblies around the capsule.
Abstract: A shelf-stable liquid base composition useful for preparing acidified milk based beverages, e.g. by dilution with water in a beverage dispensing machine, comprises: from about 2 to about 10 weight % of denatured milk proteins expressed as solid-not-fat (SNF) milk components; from about 15 to about 80 weight %, expressed as sugar equivalents, of a carbohydrate based or non carbohydrate based sweetener; from about 0.35 to about 1.50 weight % of a carbohydrate based stabilizer; and an acidifying agent present in amounts necessary for achieving a pH of about 3.0 to about 3.8 of the said base composition. Methods for preparing such a base composition and acidified milk based beverages prepared by means of such a base composition.
Abstract: The invention relates to a dispensing system and method for on-demand dispensing of spoonable or drinkable food products in a container. Single servings or larger portions of these products can be dispensed. The system and method achieve dispensing of the product with a visual differentiation of the components in the container. The container may be translucent or transparent so that the consumer can view the visually differentiated product therein. The products form yet another embodiment of the invention.

To create high quality foam, different dosing protocols including two approaches such as delivery of foaming liquid concentrates at different concentration, or getting different concentration by varying water dosing times and/or flow rates were used. Positive results were found for the dispensing systems using milk and other liquid concentrates at specific dispensing conditions (flow rates and times).
