Abstract: An adjustable cutting mechanism for mounting on an extruder. The cutting mechanism incorporates a square stock blade holder that is axially adjustable and holds a shortened cutting blade. The axial adjustment allows for uniform contact of the cutting mechanism blades with an associated extruder die surface. A shorter blade, along with the adjustability of the mechanism for contact with the die face, prevents deflection of the cutting blade and, thereby, insures the precise cutting action needed for the product to maintain shape integrity.

Abstract: A item separating or debris eliminating system includes a tank and a pump for circulating water from one end of the tank around through a duct and back into the opposite end of the tank. A medium density object collector is located within the tank, and a light debris collector is located within the tank. A conveyor filter is included through which substantially all of the water in the tank is circulated. The debris eliminating system preferably also includes a high density object collector within the tank. The system can be used to separate a variety of objects having different densities and terminal velocities in a fluid. Most preferably, the system is utilized for separating debris from potatoes and the like produce.
Abstract: Dual-stage seasoned snack chips are prepared by providing a base snack chip, applying an oleaginous coating to the base chip and then adhering a dry seasoning material to the oleaginous coating. The oleaginous coating serves as a binder and adhesive for the dry seasoning material, as well as a source of flavor and other hedonistic properties such as “mouthfeel.” The oil content of the base chip is pre-selected. The presence of two types of seasoning materials on a base chip having a pre-selected oil content results in a snack chip that provides intense flavor characteristics, excellent seasoning adhesion and a total oil content within a desirable range.
Abstract: A method and apparatus for making bowl-shaped snack food products, e.g. tortilla chips. The method features placing chip preforms in open bowl-shaped cavities and partially frying the chip preforms by filling them with hot oil from above. Additionally, the preforms are partially fried from below by immersing the lower portions of the preforms in a vat of hot oil and transporting them through the hot oil. After cooking the preforms to a desired moisture content, at which point the preforms retain their bowl shapes outside of or independent of the mold cavities, the preforms are removed from the mold cavities and subsequently cooked to completion in a secondary frying operation. The invention also features an apparatus to carry out the method.

Abstract: An improved sheeter wire device providing constant tension on a feeder spool even during wire breakage. A constant speed motor draws wire across the face of the sheeter while a drag motor maintains constant tension on the wire. A pair of pinch rollers prohibits unwinding of the feeder spool in the event of wire breakage.
Abstract: A novel pretzel chip is produced by extruding pretzel dough to form a dough extrudate comprising concentric dough rings that are interconnected and partially fused. The extrudate is sliced, and the slices are cooked following conventional pretzel cooking procedures. The dough is extruded through a die that includes a dough inlet having a plurality of metering passages arranged in concentric circles, a die interior comprised of a dough passageway containing a plurality of arcuate divider walls arranged in concentric circles, with each of said arcuate divider walls comprised of a base portion affixed to said dough inlet and a tip portion that is recessed from a dough exit port.

Abstract: Methods for making improved flavor potato products by using raw potato stock as a starting material to form a sheetable dough. The methods comprise controlled processing steps that result in a potato gel suitable for sheeting or extruding. Use of raw potato stock greatly enhances the potato flavor of the snack product ultimately produced.
