Patent number: 5948456Abstract: In a method of forming a frozen food product, the temperature of a fluid food product is lowered so that the product is plastic. A mould is pressed against the food product to cause at least a portion of the product to take up the shape of the mould. The mould is at a sufficiently low temperature when it is pressed against the product such that the product retains its moulded shape and such that the product is readily releasable from the mould. This allows frozen confectionery products such as ice cream to be successfully moulded.Type: GrantFiled: August 27, 1997Date of Patent: September 7, 1999Assignee: Air Products and Chemicals, Inc.Inventors: Sean T. Patent number: 5945152Abstract: A method for producing a fully-cooked, semi-moist, shelf stable meat product by: mixing common ingredients that act as antimicrobials or bacteria growth suppressors with raw meat, choosing other ingredients to add to the mixture for controlling end-product water activity, cooking the resulting mixture at temperatures which produce pasteurization, and controlling end-product package atmosphere. The method of preparation comprises admixing meat (any species of suitable animal protein) with vegetable particulates, flours, isolates, concentrates, or other extendable protein sources. The resulting mid-process product is then mixed with water replacing compounds, or humectants, such as sugar, salt, flavors, colors, preservatives. The raw product mixture is then moved to a scraped-surface heat exchanger for pasteurization. The method is complete after cooling the product to ambient temperature and packaging under anaerobic vacuum using a moisture/microbe impermeable barrier.Type: GrantFiled: January 26, 1998Date of Patent: August 31, 1999Inventor: David E. Patent number: 5942265Abstract: A process and apparatus for preparing diced or sliced pepperoni includes the steps of preparing the pepperoni meat mixture by grinding and mixing to specification. The blended sausage is extruded into sheet form for fermentation and cooking, following which the cooled meat mixture is chilled to 35.degree. F. or lower and sliced or sliced and diced. The product is thereafter conveyed to a spiral dryer where it is exposed to relatively warm (about 50.degree. F. to 120.degree. F.) air at an initial relative humidity of 30% or less under turbulent air flow. The dried pepperoni is conveyed to a chiller or freezer. The pepperoni has desirable flow characteristics when compared to product made using known pepperoni manufacturing processes.Type: GrantFiled: April 16, 1998Date of Patent: August 24, 1999Assignee: H&M Food Systems Company, Inc.Inventors: James Roberds, Luke B. Patent number: 5937739Abstract: The invention provides a press for bread products which includes two horizontally opposed, inclined press blocks which contain electromagnets with a trapezoidal pendulum block is pivotally mounted between the press blocks. The pendulum includes two large permanent magnets. The polarity of the electromagnets is switched in a manner to force the pendulum to swing from contact with one press block to the other. A dough ball distribution system is also provided which distributes dough balls to interstitial positions between the pendulum and the press blocks, so that when the polarity of the electromagnets is switched, the pendulum press block presses the dough ball into a tortilla. A heating system is provided to heat the press blocks and pendulum block to partially cook the tortilla and aid in removing the pressed blocks after it is pressed.Type: GrantFiled: August 4, 1997Date of Patent: August 17, 1999Assignee: X-Press ManufacturingInventor: George A. Patent number: 5500082Abstract: Disclosed is a method of removing ink from xerographically printed paper. The method comprises pulping said printed paper in an aqueous slurry at a non-acidic pH to a consistency of about 8% or less. Next, added to the pulp slurry is a sufficient amount of long chain alcohol, the long chain alcohol having a melting point above room temperature, for a time sufficient with heating at a temperature sufficient, whereby an agglomeration of long chain alcohol and ink particles is formed. Next, the heating is stopped whereby the agglomeration solidifies into particles that settle to the bottom of the pulp slurry. Then, the agglomeration of solidified particles is removed from the pulp slurry thereby leaving a remaining slurry of deinked paper fiber and water. Optionally, the remaining slurry is subjected to flotation to remove substantially any remaining minute ink left particles behind after the agglomeration.Type: GrantFiled: April 26, 1993Date of Patent: March 19, 1996Assignee: North Carolina State UniversityInventors: Hou-Min Chang, Tien-Wang Wu, John A.
