The steam is then distributed throughout the oven cavity by the fan. The unevaporated portion is drawn downward into the fan, where it too is distributed throughout the oven cavity rather than collecting on the cavity floor. Rather than building up within the injector, scale accumulates on the baffle plate where it may easily be cleaned or removed.
