Abstract: A device (1, 10) and method for the production of cooled coffee are provided. The device has a brewing unit (4) for the production of coffee, a cooling assembly (11) and a coffee cooler (14) formed as a heat exchanger. The coffee cooler (14) has at least one first and one second flow path that are connected thermally but not in a fluid-conducting manner. A coolant can flow through the first flow path and the second flow path is connected in a fluid-conducting manner with a coffee outlet (5) of the brewing unit (4). The device also has a fresh-water supply (2) and a fresh-water cooler (13) formed as an additional heat exchanger.

Abstract: The dispensing head comprises an infusion chamber constituted by at least one first portion (21), in which a seat for single-dose capsules (C) is set, and one second, closing, portion (23) of the infusion chamber. The dispensing head also comprises an oscillating expeller (51), set between the first and the second portions (21, 23) of the infusion chamber, which engages the capsule (C) inserted in said infusion chamber to cause expulsion thereof when the infusion chamber is opened. The expeller comprises an appendage (51 D) shaped so as to engage the capsule from the bottom and lift it from the infusion chamber.

The collecting tray is attached to a support member. The height adjustment assembly comprises at least one vertically extending gear rack that can be non-positively engaged by a slider provided at the support member. The slider is biased by a spring towards the gear rack and can be manually displaced against the force of the spring.

For receiving the grinding wheels, two grinding wheel support members are provided. Each grinding wheel is provided with radially extending protrusions, and each grinding wheel support member is provided with corresponding recesses to form a bayonet closure. By such a design, the provision of connecting bores in the grinding wheels can be avoided, resulting in an enlarged effective grinding surface.

Abstract: The invention provides a method of preparing hot beverages by brewing up a particulate substance extractable by means of water. Thereby, the substance received in a brewing chamber is brewed up by brewing water that has a temperature above the normal boiling point of water, preferably 110° to 130° C., but still is in the fluid state of matter. The thus brewed beverage is cooled to a temperature below the normal boiling point of water before it flows to a beverage outlet. A significant advantage of this method is that the substance is much more efficiently extracted. For cooling the thus brewed beverage, preferably a heat exchanger is used through which fresh, not yet heated brewing water flows to thereby cool it.
