    Abstract: A method according to this invention is comprised of a forming step to form a sheet from a block of bread dough that is kneaded from the raw materials for bread, a further forming step to form a bar-like dough by rolling or folding the sheet a cutting step to cut the bar-like dough, and a placing step to place the bar-like pieces of dough that were cut at the cutting step into a baking mold so that at least one cutting plane faces upward. If there are air bubbles between layers of the bar-like pieces of dough, the air bubbles can escape from a cutting surface of the bar-like pieces of dough when they rise and expand at the fermenting and baking steps.

    Abstract: An apparatus for extending food dough is provided that is compact and has a relatively long conveying path for food dough that extends the food dough. Also, the apparatus can be easily cleaned and maintained. It includes a lower frame (3) having a food-conveying member to convey food dough in one direction, an upper frame (5) located above the lower frame, and a cluster of a plurality of extending rollers that are located within the upper frame. To extend the food dough the extending rollers are arranged to be endless and rotatable. The upper frame (5) can be moved up and down in relation to the lower frame (3) so that the cluster of the plurality of the extending rollers can be completely separated from the food-conveying member. Thus, the food-conveying member can be easily cleaned.

The apparatus includes a hopper (3) for receiving a food dough F, a first cutter (7) for dividing the food dough into dough pieces, a transmitting conveyor (11) for transmitting the dough pieces, a dough feeder (9) for forming a dough sheet from the dough pieces, a feeding conveyor (13) for feeding the dough sheet, a metering conveyor (15) for weighing a part of the dough sheet, and a second cutter (19) for cutting out the part of the dough sheet when the valve measured by the first metering conveyor (15) reaches a predetermined value. The first cutter (7) and the dough feeder (9) are arranged such that when the dough piece is cut out by the first cutter, the lower end fans into an inlet of the dough feeder. The belt of the transmitting conveyor (11) is wound around the uppermost roller (55A) of the dough feeder (9).
