Matrices formed of pea protein or Shellac have been proposed, using both spray-drying and cold gelation methods. Microcapsules of the invention are resistant to degradation in the stomach and release curcumin slowly in the ileum, and exhibit improved resistance of encapsulated curcumin to thermal and high/low pH environments.
