More particularly, the present invention provides flavour modulating substances selected from the group represented by formula (I): and edible salts thereof and edible esters thereof, which can advantageously be used for modulating the flavour of foodstuffs, beverages, tobacco products, pharmaceutics and oral care products. These flavour modulating substances can be used to impart desirable taste attributes in a wide variety of applications and products. In addition, the present flavour modulating substances are capable of modulating the taste and/or aroma impact of other, flavour imparting, substances contained within these same products, thereby improving the overall flavour quality of these products.

Abstract: The present invention relates to a smoking article comprising two layers of wrapper material, the outer wrapper having an air permeability of at least 200 C.U. and having a greater permeability than the inner wrapper. Encapsulated flavour is held between the inner and outer wrappers. The encapsulation technique is dependent upon the flavour to be encapsulated and the sidestream to mainstream flavour delivery ratio required. Sidestream smoke may be altered without altering the mainstream smoke, thereby altering room odors.

Abstract: The invention provides a method of preparing a purified, pyrazine-containing aqueous composition by mixing a reducing sugar, a base, and an amino acid in water to produce a mixture; heating the mixture for a time and under conditions conducive to Maillard reactions such that a flavorful and aromatic aqueous solution is formed, the aqueous solution comprising a plurality of pyrazines and a first 4-methylimidazole concentration; distilling the aqueous solution to produce an aqueous distillate comprising a plurality of pyrazines and having a second 4-methylimidazole concentration lower than the first 4-methylimidazole concentration; and collecting the aqueous distillate. The invention also includes flavorful and aromatic aqueous compositions formed by this inventive method, as well as tobacco products (e.g., smokable materials, smoking articles, and smokeless tobacco) incorporating the flavorful and aromatic composition.

Abstract: This invention provides a method for improving the flavor and aroma properties in a smoking article. A high fructose corn syrup, ammonium hydroxide and diammonium phosphate are reacted with each other for a time and under conditions sufficient to provide a heat activatable flavorant-generating composition, which comprises 2-deoxy 2-amino glucose. The composition is incorporated into a component of said smoking article without heat treatment. The resultant smoking articles, when smoked, exhibit highly desirable flavor and aroma properties.

In the method, a mixture is provided including a reducing sugar source and a base catalyst. The mixture has a selectively enriched content of at least one free amino acid selected from the group consisting of serine, threonine, valine, leucine, and isoleucine.

Abstract: Improved flavorful and aromatic tobacco materials and a method for producing flavorful and aromatic components from all natural tobacco materials are provided. A first tobacco material is contacted with a second tobacco material to form a tobacco blend. The first tobacco material has a higher content of nitrogen source and a lower content of sugar source than the second tobacco material. The moisture content in the first and second materials of the tobacco blend is increased to at least about 20%. The tobacco blend having an increased moisture content is then subjected to heat treatment in a substantially atmospheric environment for a time and under conditions sufficient to generate flavorful and aromatic substances in said first and second tobacco materials.
