The middle cover has a bottom inward flange, two inserted holes on the top surface, a square post, a spring passed by the square post, and a toothed plate with a square hole inserted by the square post. The toothed plate has serrations at the bottom surface of the toothed plate, a cylinder on the top of the toothed plate, and a square hole at the center of the cylinder. The cylinder inserts in the spring. The serrations engage with the teeth. The outer cover has a circular wall and two pins extending downward from the top portion of the outer cover. The pins insert tightly into the corresponding inserted holes, respectively.

For a two track system, which is the preferred embodiment, each track starts 180.degree. from each other and makes at least one full turn around the circumference of the finish. Also included are intervening stops and tapered speed bumps that contact and impede the cam follower(s) in the cam tracks during closure removal to effect a delay. Raised thread segments which define the cam tracks are intersected by a plurality of vertical venting slots or pathways along their helical length to vent headspace gas.

The dome and the centering ring are guided on one another by interengaging elements and can be locked together in the open position.

The cover is secured to the cam by a slotted connection permitting limited movement of the cover relative to the bar. A cam unit is coupled to the bar and has a rotating cam having a release position in which limited movement of the cover is permitted and a locking position which spreads the clamp bar relative to said cover to seal the cover and set the latch.

Pressure can be relieved through the relief valve or edge of the C-connector after it reaches a certain level. Pressure in the cooker will raise two safety pins to restrict movement of a rod so that removal of the valve body from the valve seat is impossible and thus removal of the cover is prevented for safe operation.

A chain may be secured at each end to the stem and vessel cap, so that the cap cannot be unscrewed to open the container unless the stem is first removed. In one embodiment, the locking piston is prevented from manual override by the position of a second piston and a plurality of ball members locked in a groove.
