Variations of the peeler can be provided which enable rotations of 180 degrees, 360 degrees, and/or other angles as desired. A user-operable knob cooperatively engaged with a yoke permits the yoke and a blade secured to the yoke to rotate relative to the handle in response to rotation of the knob. A peeler having a blade fixed at approximately 45 degrees relative to the handle is also provided.

    Abstract: A single-handedly operated citrus fruit segmenter having first and second arms such that squeezing the arms into a closed position causes a curved movable scoop to extend into a citrus fruit proximate to a triangular blade and form a segment-shaped compartment. The actuation of the curved movable scoop occurs by a user squeezing the first arm toward the second arm. A pin on the first arm is operatively connected to an elongated slot of a cam mechanism such that the rotation of the first arm about its pivot location causes the cam mechanism to rotate about its own pivot location. Therefore, the cam mechanism, being also connected to the curved movable scoop, forces the curved movable scoop into the citrus fruit.

    Abstract: The present invention consists of a safety cutter for peeling green bananas or plantains wherein a handle portion is provided adjacent a head portion which carries a peeling element with dual opposing peeling blades. The dual opposing peeling blades are relatively widely spaced apart at approximately {fraction (5/16)}″ to allow the peeling element to cut through the tough, thick skins of a green banana or plantain. The present invention is also provided with an elongate retractable cutting blade which is used to first cut off either end of the green banana or plantain to allow it to be easily peeled. The plantain or green banana peeler is preferably provided into two halves secured by a bolt which allows either, the peeling element and/or the retractable blade to be changed by the user when they become dull or worn.

An arbor is detachably mounted in the power tool for rotating a fruit or vegetable against a sharp cutting blade. The cutting blade is positioned relative to the fruit or vegetable by a steady rest on the handle. The blade has a narrow elongated front cutting portion and a spaced apart narrow elongated rear portion which pivotally attached to the handle. During the peeling of the fruit or vegetable, the steady rest maintains the position of the blade relative to the fruit or vegetable. In a first aspect of the invention, the steady rest is an integral portion of the handle and has a fixed spatial relationship to the blade. In a second aspect, the steady rest is attached to the handle and its position on the handle is selectively adjustable to accommodate large differences in the size and shape of fruits or vegetables. In a third aspect, a pair of blades and steady rests are provided on a common handle.
