Abstract: An apparatus and method for using a disposable liner for cooking in a cooking vessel such as a dutch oven. The disposable liner includes a liner and one or more handles at an upper portion of the liner. The liner includes a bottom wall and an upstanding side wall. The one or more handles are made to extend from the upper portion of the liner, wherein the handles are movable. With this arrangement, the disposable liner is configured and shaped to fit in a cooking vessel, where the handles are movable downward so that a cooking vessel's lid may sit flat thereon without interference from the handles.

Abstract: A chafer comprising a support frame, a food service pan, a cover, a cover pivoting assembly, a cover mounting assembly and a cover damper assembly. The cover has a peripheral edge and is pivotably mounted on the support frame by the cover pivoting assembly. The support frame supports the pan under the cover. The cover mounting assembly releasably mounts the cover to the cover pivoting assembly to enable the cover to be pivoted about a horizontal axis from a fully closed position to an intermediate, partially open position and to a fully open position, and vice versa. The cover is arranged to be automatically held in the fully closed, partially open or fully open positions by the mere movement of the cover to any of those positions.

Abstract: A method and apparatus for distributing the residual flavor from herbs and aromatics into the interior of meat for seasoning prior to and during cooking. The apparatus comprises a reservoir for holding the aromatics in the form of a tapered, split, meat-piercing rod inserted into the interior of meat containing a predetermined amount of aromatics and or herbs. After reaching the desired depth, the devise remains in the meat during the cooking or marinating process. The devise is removed prior to the consumption of the meat leaving behind the residual flavor from the contents of the devise.

Abstract: A baking pan bottom has a recessed stepped edge all around the periphery and an internal rod around the entire pan to act as a pivot pin hinge on all four sides. The side panels and end panels of the pan are provided with a mating protruding step along a bottom edge to mate with the recessed stepped edge of the bottom to prevent leakage. The hinge enables each side panel and end panel to pivot down for access to the baked goods and pivot back up for cooking. A sliding lock mechanism in the end panels has hooks that engage loops in the overlapping extending end portions of the side panels to lock the side panels in place for cooking. The baking pan has an additional flat baking sheet, which fits on the pan bottom. The interior surfaces comprise a non-stick scratch resistant surface, which is dishwasher safe.

Abstract: A barbeque system having at least three legs and a variety of components selectively attached thereto, such as a grill surface, a warming rack, a heat source, a potholder, and a utensil arm. Food can be cooked on the grill surface, pots containing food can be heated on the potholder, and food can be warmed on the warming rack. The utensil arm provides a convenient place to position cooking utensils when not in use. The height of the heat source and the warming rack can be adjusted to allow control over the cooking heat. The barbeque system is collapsible and can be contained within a carrying case so that the barbeque system can be easily stored or transported.

Abstract: A rack of a cooking implement includes a surface for supporting food, opposed sides and opposed ends separated by the food supporting surface. The rack also includes opposing looped handles. A pan of a cooking implement has opposed end walls that are spaced apart at length further than the length of the rack and opposed side walls that are spaced apart at a width wider than the width of the rack. The pan also includes opposing upstanding handles. The handles include at least one horizontal resting surface for supporting the looped handle of the rack and at least one vertical retaining surface for abutting the looped handle of the rack. As a result, the looped handles of the rack are received and supported by the handles of the pan thereby permitting the rack to hang within the interior of the pan.

Abstract: A cooking apparatus for improved heat circulation and containment when smoking or grilling using electric, gas, or charcoal as the heat source. The base pan design enhances heat containment, and offers a channel design in the bottom of the base pan. A flame disk for even heat distribution is provided and can be used in conjunction with the base pan, and prevents internal food drippings from escaping through the disk. The disk design enhances the heat efficiency, and safeguards against drippings or ashes falling through to the burner or ground. The holes in the disk are raised, and has attached covers strategically placed over the holes to deter drippings or ashes from falling through. A fire pit container is also provided and designed for use with the base pan. The fire pit container supports a heat source such as a gas burner which directs a flame toward the base pan open hole and also toward the underside of a flame disk when a flame disk is suspended above the base pan hole.

Abstract: An apparatus and method of processing a product, such as food product, are disclosed. Untreated product is placed inside a bottom-unloading basket that is, in turn, placed within a covered vessel. For processing a food product, a porous steamer apparatus is provided for insertion into a covered cooking vessel. The steamer apparatus is comprised of two unfastened pieces, a basket and a support base, each of which has a plurality of small holes through which steam, but not food product, may pass. The basket holds the food product, is roughly cylindrical in shape, has an open-ended top and an open-ended bottom, and rests firmly upon, but is not fastened to, the support base during the steam-cooking process. The support base has an inverted conical shape and a vertical pole that has a hook-shaped upper terminus and that is integrally-connected to and protruding above and below the uppermost point of the support base.

Abstract: A lifter for foodstuffs for shifting the same from one position to another including the placing in or removal of various foods to and from cooking utensils without touching the same or piercing the same with forks, knives and the like. The lifter includes a generally rectangular support of a plurality of spaced, longitudinally extending rods or wires bounded by a retaining member having sides. The retaining member is provided with a pair of, side positioned, generally U-shaped handles which are rotatably mounted thereto. Select portions of the retaining member are formed to provide a pair of elevating legs on each of the sides and the handles are provided between such legs. The legs will elevate the foodstuff from the bottom of the utensil or other support surface upon which the laden lifter may be placed.

Abstract: A barbecue grill with an adjustment device comprises a cover, a rack, a post, a tooth plate, an adjusting gear, a spring, a knob, a bolt and a nut, wherein the tooth plate has teeth along one inner side, and the knob comprises a threaded hole, the adjusting gear meshes with the teeth of the tooth plate, the bolt is inserted through the knob, the spring, the adjusting gear, the cover, and: is tightened by the nut from the other end. This secures the tooth plate to the cover while the post of the rack is placed in the tooth plate. When the knob is turned to loosen the adjusting gear, the adjusting gear is able to adjust with respect to the teeth of the tooth plate and the gap between the cover and the rack is adjustable.

Abstract: A raisable and lowerable platform that houses a removable charcoal or gas grill and a removable cooler chest, with a storage compartment between the two, a telescoping flagpole mounted to the platform to display team colors, and a fold down table attached on both ends of the platform to provide more cooking area. In the preferred embodiment to date the platform is connected to a wheeled scissors lift system that is used to raise and lower the platform. The apparatus is carried and transported via a rollered receiver hitch assembly that is an integral part of the scissors lift system and that is conventionally mountable on a transport vehicle.

The pan insert has two insert side panels that are hinged at their bottom edges to the longitudinal edges of the bottom of the pan insert. The hinges allow the insert side walls to support the meatloaf, bread or other product during baking, and fold downward to allow access to the product for cutting and serving purposes. As such, the present invention can be used as a serving tray. Removal of the pan insert is facilitated in one of three ways. First, built-in hand grips in the flanges located on the pan insert. Second, a set of handles that connect to the flanges located on the pan insert. Third, a sliding unit that slidably inserts into the cavity formed by the rolled edges of the flanges on the pan insert.

Abstract: A covering system includes a frame, a cover pivotally coupled to the frame and a stop surface pivotally coupled to the frame. The cover pivots between a closed position, a substantially open position and at least one intermediate position. The stop surface pivots between a first position in which the stop surface engages the cover when the cover is in the at least one intermediate position to retain the cover in the at least one intermediate position and a second position permitting the cover to be pivoted to at least one of the substantially open position and the closed position. The stopper includes a counterweight which biases the stop surface towards the first position as a result of gravity.

Abstract: A collapsible barbecue grill in the present invention includes a body in a box shape capable of being pivoted with two side plates respectively disposed at both side walls thereof and a cover plate disposed at a rear wall thereof, each of the two side plates provided with a plurality of engagement grooves; a plurality of positioning members capable of being screwed with the cover plate for connecting the two side plates and the cover plate when the body is extended; and, a supporting frame capable of being placed across the two side plates of the body for supporting a grid member, by which a combination of the aforementioned components enables the barbecue grill of the present invention to be quickly extended in use or folded into a reduced dimension for the convenience of carrying and storage only occupied with minimal space.

A layer of copper may be placed on or embedded within the side and bottom panels of the container to disperse heat more evenly. Heat transfer surfaces of the container may be corrugated or otherwise expanded in area to enhance extraction of heat from the source.

The invention is particularly applicable to cake tins.

The lid is turnable relative to the bottom wall between a closed position, in which the lid confines the inner space at the rear and top sides of the housing, and an open position, in which the lid turns away from the door so as to permit the inner space to be exposed at the rear and top sides of the housing. A locking device is mounted on the lid so as to lock the lid unto the side walls when the lid is at the closed position.

Abstract: A rotisserie cradle including a trough shaped cradle constructed entirely of a rod framework to be lighter, easier to clean, and cheaper to manufacture, with food hold down grates positionable by swing arms pivoted to the inside of the cradle framework so as to allow manually settable positioning of the grates against the food to hold the same against the inside of the cradle framework. Each hold down grate is tiltable in any direction to engage any contour of the food to be held, and the swing arm movement accommodates different sized food items. Friction snubbers can be used to maintain the swing arm positions. A pair of socket blocks for receiving the rotational support shafts are mounted by the rod members forming the cradle framework.

When collapsed, the grate and grills fold onto or are retracted within the firebox, and the entire firebox assembly is stowed in a sealed grill housing. The top and bottom portions of the grill housing mate to form a sealed container-like structure for convenient transportability or storage.

The rotisserie basket consists of a pair of end plates secured in a parallel relationship by a set of parallel rods. A gate is hingeably attached to a hinge rod, and when closed, bears against a latch rod. The gate is secured into position by a latch that positions the latch rod in a “U” shaped portion of a centrally located rod. A leaf spring holds the food to be cooked onto the set of rods, securely positioning the food for cooking.

The two lateral sides of the push-cart are respectively pivotally mounted with a plurality of support frames, the height of the frame is lower than the width of the cart body and the bottom edge of the cart body, at the corner of the frame is mounted with a mounting tube having a horizontal tube body and a through hole is mounted at the wall of the mounting tube and an elastic peg is inserted, an engaging hole, corresponding to the elastic peg, is provided at the support frame such that when the frame is vertically extended from the bottom board of the cart body, the elastic peg will automatically engage with the engaging hole to lock the frame, and the releasing of the elastic peg will fold the frame and assemble below the cart body.

Abstract: A reversible clamping member for use in a rotisserie grill having spaced end plates and a plurality of adjacent rods therebetween in a cradle formation connected at their ends to the plates. One pair of adjacent rods are spaced to define an opening for the passage of food into the interior of the cradle. The reversible clamping member has a pair of main rods intersecting each other and connected thereto at a center area of each main rod. Both main rods have slight bends in their center areas for closer positioning to the food located in the interior of the cradle. One of the main rods has a U-shaped member secured at each end, wherein one of the U-shaped member has legs perpendicularly extending from its center portion and the other U-shaped member has legs angularly extending from its center portion. A sleeve is removeably mounted at one end to one of the main rods, and the sleeve is removeably mounted at the other end to one of the adjacent rods of the grill.

Abstract: A portable brazier includes a support frame with an accommodating space for accommodating a source of heat, such as charcoal, a perforated surrounding member which is mounted perimetrically on an upper peripheral edge of the support frame and which confines a roasting space, and a lid member which is mounted on the perforated surrounding member to cover the roasting space. The perforated surrounding member has an access hole to provide access to the roasting space. By virtue of the perforated surrounding member, the portable brazier can permit cooking of foodstuffs and can serve as a heater.

Abstract: Cooking appliances, cooking assemblies, and cooking assembly components that improve heat distribution are provided. In one embodiment, a cooking assembly has a sear grid including a radiant panel having an undulating shape. The panel defines at least one generally parabolic dome with a radiused peak to allow liquids at the peak to be rapidly heated by the burner. The dome has sides extending away from the peak with a generally increasing slope to cause liquids flowing down the sides of the dome to accelerate. In another embodiment, a double U-shaped burner is provided. A U-shaped burner has a base for positioning at the front of the cooking assembly and a pair of legs that extend toward the rear of the cooking assembly. A second U-shaped connecting tube is positioned to connect the U-shaped burner base to the front of the cooking assembly housing.

Abstract: A pan with a foldable handle comprises a holder at one side having a pair of lugs extending upwards from respective ends. One of the lugs has a hole connected to an end of a slot. The slot has a width slightly smaller than the inner diameter of the hole of the lug. The handle has a pair of elastic rods at front end extending outwardly. The end of each elastic rod is bent outward to form an angled end to be inserted into a corresponding hole of the lug. One angled end inserted into the slot of the hole of the lug is formed in a flat shape so that it may stay in the slot. The thickness of the angled end is smaller than the width of the slot and the width of the angled end is smaller than the inner diameter of the hole, so that it may spin back and forth in the hole for folding the handle, and when the angled end is inserted into the slot, the handle is fixed at position.

The integral frame comprises a first end frame member attached laterally to a first end of the flexible grill surface and a second end frame member attached laterally to a second end of the flexible grill surface such that the flexible grill surface, the first end frame member and the second end support member are oriented in a parallel plane. The first end frame member and the second end frame member each comprise an end support member having a proximal end and a distal end, a side support member pivotally connected to one of the proximal end or the distal end of the end support member, a proximal leg support member being pivotally connected to the end support member at the proximal end and a distal leg support member being pivotally connected to the end support member at the distal end.

Abstract: An expandable rack for foodstuffs or other articles for temporary use after baking or cooking to allow the foodstuff to cool. The expandable rack consists of a plurality of tiers or layers which are slidably arranged with respect to one another such that the entire rack may be slid together to form a compact size for storage. A first layer or tier consists of a plurality of spaced, longitudinally extending rods surrounded by a continuous, formed member, to substantially provide a rectangular shape and having downwardly depending legs to elevate the same above a support surface. Each of the additional layers employs the same construction but is of reduced size to permit all layers to be slid together in underlying relation to the first layer. The structure for retaining the tiers or layers to one another and allow sliding therebetween is incorporated into each of the tiers and each tier has support legs.

Abstract: A removable firebox for use in a portable, collapsible barbecue grill including retractable heating grate on top of the firebox and a retractable mid-level cooking grill for providing high-temperature cooking. A lower main grill is disposed in a base cavity of the barbecue grill for providing moderate temperature cooking. The firebox rests in the base cavity of the grill housing and provides heat to a cooking area defined by the base cavity, an upper lid of the housing and a pair of side walls extending upward from the base cavity. The firebox and/or the upper lid includes insulation and/or cooling baffles to protect users from heated surfaces. Venting is provided from the sides and rear of the grill housing. When collapsed, the grate and grills fold onto or are retracted within the firebox, and the entire firebox assembly is stowed in a sealed grill housing. The top and bottom portions of the grill housing mate to form a sealed container-like structure for convenient transportability or storage.

Abstract: A folding handle assembly for cooking pans is disclosed. In the handle assembly, a bracket, mounted to the external surface of a cooking pan, is formed by pressing a steel plate to have a horizontal fitting hole and two opposite stoppers. A folding handle is movably assembled with the bracket. This folding handle is formed by specifically and symmetrically bending a steel wire to have two opposite fitting ends, two snap arms and a handle body. The handle is hinged to the opposite ends of the fitting hole of the bracket at its opposite fitting ends, and selectively, elastically caught by the two stoppers of the bracket at its two snap arms, and is gripped by a hand at its handle body. A coil spring is seated within the fitting hole of the bracket at a position between the two fitting ends of the handle, thus normally biasing the two fitting ends of the handle outwardly in opposite directions to allow the snap arms of the handle to be reliably caught by the stoppers of the bracket.

Abstract: A removable firebox for use in a portable, collapsible barbecue grill including retractable heating grate on top of the firebox and a retractable mid-level cooking grill for providing high-temperature cooking. A lower main grill is disposed in a base cavity of the barbecue grill for providing moderate temperature cooking. The firebox rests in the base cavity of the grill housing and provides heat to a cooking area defined by the base cavity, an upper lid of the housing and a pair of side walls extending upward from the base cavity. The firebox and/or the upper lid includes insulation and/or cooling baffles to protect users from heated surfaces. Venting is provided from the sides and rear of the grill housing. When collapsed, the grate and grills fold onto or are retracted within the firebox, and the entire firebox assembly is stowed in a sealed grill housing. The top and bottom portions of the grill housing mate to form a sealed container-like structure for convenient transportability or storage.

Abstract: A structure of a multi-function cooking utensil simultaneously having the functions of frying, boiling, sauteing, deep-frying, and steaming food is composed of a pot member, a steaming member and a cover member. By means of a design of a fixing bolt on the upper rim of the cover member and the two lateral external sides of the steaming member and the pot member, users can change according to their need the detachable handle, or detachable grip, or detachable handle of the cover in order to lift the cooking utensil. In addition, by means of the design of several grooves of different depths in the internal rim of the lateral side of the steaming member and the pot member, and in compliance with several protruding rafters of a barbeque rack or a steaming tray provides the pot member and the steaming member several layers for cooking.

Abstract: A gas-fired or briquette-burning barbecue grill that outputs extremely high BTUs from a removable, vertical firebox that is backwardly inclined so as to provide a combination of direct and indirect heating. In addition, multiple cooking grids positioned at various vertical levels across the face of the firebox provide an enormous cooking area for grilling, broiling, and searing. Inclination minimizes ash avalanche during briquette burning and also increases the effective heating area applied to multiple cooking grids of gas-fired and briquette-burning grills. A top grid located directly over the firebox provides a surface for searing or high-temperature cooking (i.e., direct heating), a mid-level cooking grid provides medium temperature indirect and/or partial direct heating cooking, and a lower main cooking grid provides indirect medium temperature for broiling or baking.
