In some embodiments, for example, a user may place a divider in the interior of a fuel basket to coarsely adjust the amount and type of solid fuel used to heat a food-cooking enclosure of the temperature controlled charcoal grill and smoker. In addition, the user can also position a heat deflector tent above one or more heat transfer openings in a grease tray to further adjust the cooking and smoking temperature. Further still, the user can provide even finer control (including closed-loop control) over the cooking and smoking temperature using a controller that controls the speed of a fan that directs combustion air into the fuel basket.

It then guides the gases to flues behind partitions that define sides of a cooking chamber. The gases flow over the partitions, down past food to be cooked, and then out vents. A uniform temperature distribution is achieved in the cooking chamber. The cooking assembly can be a barbecue cooker.

A removable grate is selectively disposed inside of the container above the lava rock when the device is to be used as a grill for holding foods directly up above the lava rock and such grate is removable when the device is to be used for smoking foods. When the apparatus is to be used as a smoker, a metal cabinet having a rear wall, a pair of sidewalls connected to the rear wall, a removable front wall and a top wall is placed upon the container and has an open bottom so that the heat from the lava rock will be trapped within such metal cabinet.

Food on the rotisserie is shielded from the firebox by a baffle wall which extends across the oven chamber, yet has its margins spaced from the back wall and door, so that heated air and smoke circulate freely between the region of the firebox and the region of the rotisserie.

    Abstract: A steam heating unit for heating and freshening food products having a food compartment enclosed by a pivoted cover or lid and a heat exchanger assembly for generating and superheating a charge of steam. The heat exchanger assembly comprises a heater plate having an electric resistance heating element therein and a heater plate cover disposed over the heater plate. The heater plate cover includes a plurality of ribs or barriers which form with the heater plate a steam generating chamber and a pair of steam superheating chambers. A charge of water is directed onto the heater plate upper surface, which converts the water to steam that then passes through a pair of throttling passages into the superheating chambers. In the superheating chambers, the steam is dried and superheated and then flows through a plurality of passages into the food compartment where it heats the food contained therein and imparts a limited amount of moisture to freshen it.
