Abstract: A three-dimensional shaping apparatus includes a melting section providing a shaping material to a channel, a nozzle ejecting the shaping material to a shaping region of a shaping table, an ejection-amount adjusting mechanism adjusting an amount of the shaping material from the nozzle, a suction member sucking the shaping material in the channel, a memory configured to store a program, and a processor configured to execute the program so as to control the three-dimensional shaping apparatus. The processor is configured to stop the ejection of the shaping material and, thereafter, prior to resumption of the ejection of the shaping material, execute material purge processing for discharging the shaping material remaining in the melting section to a region different from the shaping region. The suction member is located closer to the nozzle than the ejection-amount adjusting mechanism in the first channel.

Abstract: By preheating temperature raising unit of a steam and hot water generating device beforehand to a predetermined temperature, and supplying water in an amount equal to or more than predetermined amount V (per unit time) to the temperature raising unit, a large amount of steam is instantaneously generated. At this time, hot water adhered to the temperature raising unit rises along with the steam, and the steam and hot water flowed through a steam hole, a relay tube, and a steam chamber are caused to eject instantaneously with accumulated steam pressure from a steam and hot water discharging port. The steam and hot water then hit and heat food products accommodated in a cooking chamber. Thus, a heating cooker capable of promptly heating a food product with steam can be provided.

  • Patent number: 8800436
Abstract: A heating device of a food material that can heat a food material while preventing oxidation reaction and the like of the food material as much as possible is provided. A food material 8 is held under a reductive atmosphere where air is eliminated by filling superheated steam in a heating chamber 10 at a pressure exceeding an atmospheric pressure. Thus, because the food material 8 is heated under the reductive atmosphere where air is eliminated by filling the superheated steam, not under a conventional atmosphere where oxygen and nitrogen exist. Therefore, a Maillard reaction and an oxidation reaction can be suppressed, and a thermochemical reaction which could not be caused in the conventional heating method is caused in the food material 8. Thereby, it can be expected that the heated food material 8 acquires a characteristic which did not exist in the past, with less degradation.

  • Patent number: 8215232
Abstract: A cooking apparatus for assuring easier cleaning of contaminants, such as food residue, attached to the wall surface of a cavity in the cooking apparatus is disclosed. The cooking apparatus includes a body defining the outer appearance of the cooking apparatus, and a cavity defining a space for heating and cooking an object and having an inner surface to form an oil-repellent surface by being heated. In a cleaning method for the cooking apparatus, the inner surface of the cavity is heated prior to cooking food, to have an oil-repellency. The inner surface makes it difficult for the contaminants to be attached thereto. Even if the contaminants are attached, the contaminants have a very low adhesive power and thus are easy to clean.

  • Publication number: 20120118175
Abstract: Apparatus and methods to non-thermally treat goods for human consumption with carbon dioxide. Apparatus and methods rely on multiple pressure changes of carbon dioxide to affect one of three processes. A first process rapidly freezes and thaws water on the surface of the goods in rapid succession multiple times to detrimentally affect pathogens. A second process raises the pressure and temperature of carbon dioxide to supercritical conditions to detrimentally affect the lipids in the membranes of pathogens. A third process adjusts the pressure to form a dense carbon dioxide liquid with a low pH that may also detrimentally affect pathogens. All processes may be repeated or performed in succession, or in any order. Optionally, thereafter, the goods may be stored at low temperature in substantially 100% carbon dioxide for further pathogen reduction.

  • Patent number: 8166871
Abstract: A steamer for sandwich buns, bagels, croissants, cakes, vegetables, pastas, and other foods delivers fixed amounts of water onto a hot, dry platen through a vertically-oriented water conduit which is also thermally insulated from the hot platen and made from thermally insulating materials. The vertically-oriented water conduit retains water after a water supply is shut off at the beginning or end of a steam generating cycle. Orienting the conduit vertically reduces the surface area of liquid water exposed to air. Insulating the water conduit from the hot platen reduces the rate at which water standing in the conduit evaporates. Tubes used in the water conduit are insulating and easily removed from the water conduit assembly and flexible. Minerals that precipitate out of solution and become deposited onto the flexible tube are easily removed by flexing the flexible tube.

  • Patent number: 8161901
Abstract: An apparatus for slicing and applying a spread packaged in a container onto a food item. The apparatus includes an applicating station for applying a pre-selected quantity of the spread onto the food item as the food item is moved therethrough. The apparatus further includes a pumping station in fluid communication with the applicating station for transporting the spread from the container to the applicating station. In one preferred embodiment, a loaf of bread is first sliced and thereafter split open about a hinge extending along the length of the loaf. A spread, e.g., a garlic/butter mixture, is then applied to the exposed bread surface.

  • Publication number: 20120082776
Abstract: A food processing system 10 comprising a cooking apparatus 12 and a cooling apparatus 14. The apparatus 12, 14 are similar and are configured for processing sausages which have casings which are fragile and easily ruptured. The apparatus 12 comprises a processing vessel 16 for containing a cooking liquid, a feed chute 18, a guide means in the form of jets 56.1, 56.2 and 56.3, a screw conveyer 22 and a discharge conveyer 24. The sausages are fed into the vessel 16 via feed chute 18. The jets 56.1, 56.2 and 56.3 guide the sausages into optimal positions relative to the screw conveyer 22 which conveys the sausages to the discharge conveyer 24. The jets 56.1, 56.2 and 56.3 also separate the sausages ensuring that the sausages do not “bunch up” when deposited into the vessel 16 and also ensure that the sausages are aligned and travel in a direction substantially parallel to the axis of rotation of the screw conveyer 22 thereby to reduce impact forces applied to the sausages by the conveyer 22.
