    Abstract: The present invention includes methods and devices for mass producing cooked, cooled egg products having a grill fried egg appearance. One device includes a portion for positioning whole, intact, shelled eggs positioned laterally across and above a cooking mold conveyor, and a portion for cracking the eggshells and depositing the eggs into cooking molds on the conveyor. Some devices and methods include an egg yolk splitter for rupturing the egg yolk sac to deposit a whole egg having a ruptured egg yolk into each mold. Other devices and methods include irregular shaped egg molds for providing a mass produced cooked egg having a natural, irregular shaped outlines and/or surfaces. Devices and methods according to the present invention can be used to produce irregular, outlined shaped cooked egg products including whole eggs, formulated eggs, or eggs made from scrambled egg mixes.

    Abstract: An apparatus for the controlled fracture of the outer hull of a nut-like fruit wherein a reciprocable piston is moved within a frame and is supported and guided by arms that interfit with the piston to guide it or non-rotating movement into and out of engagement with the nut-like fruit. A key actuator is rotated by the user and which rotates an actuator, threadedly interengaged with the frame and which serves to provide the reciprocable movement of the piston. The nut hull is itself positioned between the piston and an anvil that among the surfaces of the piston and anvil that crack the nut hull are both configured so as to retain the nut in a stable position where it can be acted upon by the apparatus. In an alternate embodiment, the apparatus is modified so as to act as a garlic press using the same piston constrained motion. In a still further embodiment. the apparatus is modified so as to operate as a corkscrew to safely and easily remove the corks from bottles such as wine bottles.

The data in the processor can be used to accurately calculate the weight of eggs processed by the egg-breaking machine. In addition, this data can be used to calculate the yield of the machine, by comparing it with data regarding the weight of the shells of the broken eggs and the weight of the egg contents from the broken eggs.

    Abstract: An egg cooking and packaging process and apparatus are disclosed in which whole eggs are deshelled and transferred intact to cooking pans without breaking the yolks or separating the yolks from the whites. Additional egg white is preferably dispensed into the pans before the whole eggs are received therein to act as a cushion for the yolks and provide a low cholesterol mixture of yolks and egg whites. The eggs are cooked with dry culinary steam in a multiple temperature zone steam tunnel that slowly increases temperature from zone to zone to prevent toughening and yolk darkening. As the cooked eggs exit the steam tunnel they are dumped into a dicer and transported to form and fill packaging equipment which packages and seals the eggs while they are still at a sterile temperature. The sealed packages are cooled to a refrigerated temperature with sprayed ice water, and this creates a partial vacuum in the packages which prolongs their shelf life.

In a second embodiment, the apparatus provides for both evacuation and flushing of an egg.

    Abstract: The apparatus includes a tube for inserting into an egg having one hole in the shell. The tube extends into the shell through the egg yoke and egg white until one end contacts the inside surface of the shell opposite the hole. The tube is connected to a squeeze bulb air supply. A chute is positioned below the hole around the tube. When the squeeze bulb is squeezed air is supplied to exit the one end inside the shell. The air causes the content of the egg yoke and egg white to flow out the hole around the tube into the chute. In the alternative embodiment the end of the tube is formed with an air relief to facilitate air flow into the shell when the end of the tube is in contact with the inside surface of the shell. The empty egg shell is then used for "Egg Art".
