The barrier coated cinnamon substantially reduces or eliminates the formation of gray dough in the cookie dough product when the cookie dough product is stored under refrigerated or frozen conditions. The barrier coated cinnamon ingredient includes cinnamon coated with a high SFI fat. Other ingredients, such as spices or flavorings, can also be prepared using the barrier coating to reduce or eliminate the formation of gray dough or other discoloration or forms of deterioration in ready-to-bake dough products.

    Abstract: A gelled food product similar in texture to gelatine but containing ingredients similar to pudding or flan comprises milk, cinnamon, sugar, pecans and dissolved corn starch as the gelling agent. Flavoring agents such as strawberry, cherry, vanilla and coconut can be added and ground cinnamon can be placed on top. A method of making the gelled food product includes the step of warming a quantity of milk over a low heat, adding a stick of cinnamon, then adding sugar, pecans and a food preservative to the warming milk. Preferably, corn starch is used as the gelling agent and is added after being dissolved in a removed portion of the warm milk, which is then added back in to form a gellable mixture. After boiling, the mixture is prepared for consumption by separating into single serving sized containers and then cooled. Flavoring agents and/or ground cinnamon can also be added.

    Abstract: An alcoholic beverage with dessert food flavoring and method for producing is disclosed that is independent of a vodka component. The method includes combining approximately one part apple cider with two parts apple juice, adding approximately one third part sugar, adding a predetermined amount of cinnamon, simmering the combined apple cider, apple juice, sugar and cinnamon for up to three hours, and after cooling, adding up to one-half part grain alcohol. One embodiment is directed to, after adding the grain alcohol, bottling the alcoholic beverage with a predetermined amount of cinnamon sticks. A further embodiment is directed to simmering the combined apple cider and apple juice with a single cinnamon stick if a wet part is approximately one-half gallon.

    Abstract: A tincture composition includes gel-free sea moss extract; about 80-90% by volume glycerin; about 10-18% by volume ethanol; and about 0.5-1.5% cinnamon oil. The total amount of glycerin, ethanol, and cinnamon oil is 100%. A method of producing the composition includes soaking sea moss in water; drying the sea moss; immersing the sea moss fully in glycerin; providing an extraction blend; blending the sea moss, the glycerin, and the extraction blend to form a suspension; straining the suspension to extract a tincture; and heating the tincture at 50-200 degrees Fahrenheit for 1-24 hours. The extraction blend includes, per 1 part by volume glycerin: 1/16 to 2 parts by volume ethanol and 1/100 to ¼ parts by volume of cinnamon oil. The tincture composition has an excellent shelf life and improved palatability. A binding agent may be added to prevent separation.
