    Abstract: A system and method for controlling blisters. The method begins by mixing the ingredients to form a dough with a moisture content between about 35% and 60%. The dough is sheeted and cut. Thereafter, the dough is pre-heated to reduce the moisture content to between about 10% and about 45%. The preforms are then docked and dehydrated. The docking system, in one embodiment, has a backing plate and a docking device with at least two docking pins of varying lengths. The docking device is adjustable relative to the backing plate. The system also has a removing plate which removes preforms from the docking pins.

    Abstract: Apparatus for cutting a puff extrudate utilizing a blade that passes through the extrudate while the extrudate is in a viscous melt stage. The present invention utilizes a tube to facilitate production of a curly puff extrudate. A gap is provided in between the tube and the extruder die to allow a blade to access the extrudate as it exits an orifice in the die. The blade accesses the extrudate at the viscous melt stage, before the extrudate has cooled and hardened. The blade nicks the extrudate, as opposed to completely cutting it, which allows the extrudate to remain connected throughout processing such as curling in the containment tube. The gap also allows steam to be vented form the extrudate as it exits the orifice in the die. The nicked extrudate separates when fried or baked.

The molding, scoring and cutting are simultaneously performed by passing the semi-solidified sheet through a nip of a second pair of cylinders. One of the second pair of cylinders has scoring means for forming the folding scores in the final sheet and cutting means for cutting the final sheet to form the plurality of the blanks and the other of the second pair of cylinders has recess means complementary to the cutting means for receiving the cutting means and effectuating the cutting.
