Abstract: The present invention discloses methods to improve the processing and storage stability of dry enzyme preparations. To this extend an inorganic salt, e.g. MgSO.sub.4, is dissolved in an enzyme containing solution which is subsequently dried, using e.g. spray drying. Not only does the addition of salt improve the yield of enzyme activity upon drying, also the storage and processing stability of the obtained solid composition containing the enzyme and the inorganic salt are improved with respect to enzyme activity. The invention further discloses solid compositions comprising enzymes and inorganic salts.

Abstract: A dough suitable for baking biscuits is presented which comprises a proteinase which is at least partially inactivated by oxidation with an oxidizing agent and a second enzyme which produces the oxidizing agent. The protease is present in 10.sup.6 to 10.sup.8 NF/kg flour, and the enzyme which produces the oxidizing agent is present in 100 to 2000 SU/kg flour. The resulting dough has a consistency between bread dough and a fully hydrolyzed dough and is used to bake biscuits.
Abstract: The present invention discusses the use of pectinesterase to demethoxylate high-methoxylated pectins. The pectinesterase makes possible the preparation of food containing fruit or vegetables in a more efficient way. Specifically, fruit and vegetable jams, jellies, compotes and soups are prepared without or with greatly reduced sugar and pectin addition. The present invention also discusses a process for producing apple sauce comprising the use of pectinesterase.

Abstract: An enzymatic process for the conversion of glucose into gluconic acid, uses concentrated glucose solutions. The process employs a combination of glucose oxidase and catalase enzymes which may be obtained from an Aspergilltus niger strain and has a high ratio of catalase;glucose oxidase activity. The enzymatic process requires less time than conventional fermentation processes, the yield of the conversion is close to 100% and the obtained gluconic acid/gluconate solutions do not contain impurities.
