Abstract: A milk calcium composition which is highly dispersible and tasty can be obtained by adjusting the pH of a permeate containing lactic acid and lactic acid ion, which was obtained by treating whey with a UF membrane or NF membrane, to recover milk calcium as a slurry-like precipitate and then admixing this milk calcium with milk proteins.
Abstract: Addition of a specific sugar compound to an iron-containing protein composition solution can provide an excellent freezing and thawing stability and restrained precipitate productivity in a thawed solution of its frozen product and increase the efficiency in the use of the iron-containing protein useful for enrichment of iron in a food or drink, production of iron preparations.
Abstract: A milk basic protein fraction is heated if necessary, the resulting precipitate is removed to recover the resulting supernatant, alcohol is added to this supernatant, a fraction containing a high concentration of milk basic cystatin is recovered by removing the resulting precipitate and brought into contact with a carrier containing a sulfuric acid group, such as heparin, to recover a fraction which is not adsorbed onto the carrier, and this fraction is then treated with an ultrafiltration membrane having an cut-off molecular weight of 10-50 kDa to recover the permeate to produce a fraction containing a high concentration of milk basic cystatin.

Abstract: Urea is readily isolated and recovered from natural products. Urea can be brought into the permeate side by treating a urea-containing fraction extracted from natural products or sewage containing urea, with a nanofiltration (NF) membrane or reverse osmotic (RO) membrane. A milk-derived composition containing urea at a level of more than 0.2% of the total solids can be obtained by treating natural products such as milk or milk materials with an NF membrane or RO membrane to bring a fraction containing urea into the permeate side.

Abstract: A processed whey protein with an improved shelf life comprising partially heat-denatured whey protein and casein protein is provided. The partially heat-denatured whey protein can be prepared by heating a solution with a protein concentration of 0.5 to 15% by weight and pH 6-8 at 55 to 120° C. for 1 to 120 minutes. A process for the preparation of processed whey protein is also provided and comprises adding casein protein to partially heat-denatured whey protein, or adding casein protein to non-denatured whey protein and heating the mixture to partially denature the non-denatured whey protein. The processed whey protein has an improved shelf life. The gel obtained from the processed whey protein exhibits high water retention capacity and superior elasticity. The product is useful as a raw material of foods.
Abstract: An L-carnitine agent has an indispensable function in the body and utility as a material for pharmaceutical agents or food and drink. By subjecting milk or modified milk products of mammals from which casein is removed, to the treatment of desalting and partial removal of lactose followed by drying, L-carnitine content, lactose content, and ash content are adjusted to 0.1˜100 mmol/100 g, 20˜95 g/100 g, and 5 g/100 g or less, respectively.
