Patent number: 5444162Abstract: A mixture of disaccharide esters of 3-methylpentanoic and acetic acid is prepared and used as flavor precursors. The esters average at least 4 and preferably at least 4.5 3-methylpentanoyl groups per disaccharide moiety, with remaining positions being substantially occupied by acetyl groups. Suitable disaccharides are sucrose and lactose. Preferably the disaccharide ester has an acetyl/methylpentanoyl group ratio of about 2.3 to 3.2:4.8 to 5.7. The disaccharide esters are suitable for flavoring products undergoing a heating step during preparation or consumption, such as ingredient mixes for extrusion, frying or baking, and especially tobacco. Patent number: 5437886Abstract: A hard-frozen anisotropic foodstuff is subjected to a process of "veneer-peeling" at a core temperature of -40.degree. C. to -5.degree. C. In this "veneer-peeling" the hard-frozen foodstuff is for example cut in the manner of a lathe or like a pencil-sharpener. If the foodstuff is raw or uncooked meat, veneer-peeling weakens or fragments the strong connective tissue within the meat whilst retaining the essential fibrous character of the muscle fibers resulting in less tough meat. Thus lower quality meat can be upgraded. A wide array of morphologies of meat particles can be prepared. Patent number: 5387373Abstract: A stable aqueous detergent composition is provided in liquid or gel form containing from 10 to 80% by weight of an active detergent mixture comprising primary alkyl sulphate in an amount of 15 to 75% by weight of the active detergent plus betaine and/or amine oxide in an amount of 10 to 40% by weight of the active detergent mixture. Primary alkyl sulphate having chains of 10 or 11 carbon atoms provides at least 25% by weight of the primary alkyl sulphate present. The betaine and/or amine oxide is at least two thirds of the amount by weight of any primary alkyl sulphate having carbon atom chains of 12 carbon atoms or longer. The C.sub.10 and/or C.sub.11 alkyl sulphate is surprisingly effective as a detergent in such compositions despite higher water solubility than longer chain alkyl sulphate. It can enhance mildness compared to longer chain alkyl sulphate, and can replace or partially replace alkyl ether sulphate.
