    Abstract: An apparatus for supporting and maneuvering an animal carcass includes a frame and a carcass holding device connected with the frame. The carcass holding device includes a gear assembly, a pair of support arms, and a pair of plates connected with the support arms. The support arms each have a first end connected with the gear assembly and a second end with which the plates are connected. The gear assembly is operable to displace the plates between a retracted position in which the plates may be inserted into an animal carcass rib cage, and an expanded position wherein the plates engage the rib cage to secure the animal carcass for butchering. The frame is adjustable to provide linear displacement and rotation of the carcass holding device.

The one or more embodiments provided by the present disclosure may satisfy the needs of large-scale continuous production in factories, reduce labor costs, and improve production efficiency.

The holding apparatus rotates relative to the transport device about an axis perpendicular to the transport direction, and is brought into operative connection with an actuating lever on the frame. This resembles a chicken wing drumette and provides a wing-like experience when eating Buffalo style.

The combination as claimed including the ultrasonic knife can perform a meat cut while penetrating the meat with less force than the typical penetration that occurs when using a traditional knife.

    Abstract: A crab eviscerating disc is used in a crab processing machine and a method for processing a crab to a market condition. The disc is used to mill a groove along the underside of a crab body without completely cutting the crab body. Each tooth on that disc has a cut clearance angle of zero degree, and a hook angle of zero degree. Because of these teeth, the depth of the groove is limited by a bony plate and a bony ridge in the crab body. The visceral cavities of the crab body are cleaned by high pressure water sprays oriented in the groove while the crab body is still attached.
